Healthier Gingerbread Man Cuties
The Gingerbread Man has arrived!! A Christmas classic!! We couldn’t carry on with this seasons Christmas cookie series without gingerbread cookies! These healthier gingerbread man cuties, are so delicious and they’re perfect for your Christmas baking! They have the most perfect gingerbread spice, and have a delicious soft texture when you take a bite! They are super easy to make and I find them quite fun because you get to cut out the cookie cutter shapes, you can do gingerbread shapes, or use other cookie cutters as well! I used a snowflake cookie cutter and a gingerbread man cookie cutter and they came out soooo cute! I kept the decorating super simple and they turned out perfect I think! Also because I’m not the best when it comes to decorating lol! But i’ll get there haha
What You’ll Need
The ingredients for the most part are very similar to my other recipes except the addition of Tapioca flour and molasses which of course makes the gingerbread part come to life! The tapioca flour works perfect in the recipe because it allows it the dough to hold together beautifully, and makes it really easy to roll out your dough! It’s also what I used to flour the surface and rolling pin and it’s great at allowing no stick! Other than that it uses pretty much the usual when it comes to my healthy baking recipes! If you don’t have tapioca flour on hand you can also use cornstarch as a replacement, or arrowroot starch!

egg or flax egg (1 tbsp flax meal with 3 tbsp water let sit for 5 min)
maple syrup or honey
molasses
vanila
almond flour
oat flour
tapioca flour
coconut sugar
baking powder
sea salt

Making The Gingerbread Man Cuties
Okay these gingerbread cookies are by far the easiest Christmas cookie I have made to date lol, and they only take 8 minutes to bake! They are the perfect cookie if you are wanting to make a batch the day of, or the day before Christmas! Also what an adorable idea for a holiday themed date, and you can decorate them together after… awwww! So cute! To start off you will want to whisk together your egg or flax egg with your maple syrup or honey and your vanilla, then add your molasses! Whisk in your molasses and set aside your wet ingredients to be added in later!
Now for your dry ingredients! Because we are essentially using three different types of ‘flours’ in the recipe I recommend you sift them all together first just to create an even texture throughout! I sifted together the oat flour, almond flour, tapioca flour, baking powder, coconut sugar, and sea salt first and then added the gingerbread spice! It worked out perfectly! I haven’t tried this recipe without sifting together the flours but I’m sure if you don’t have a sifter you would just be fine mixing them together! Once you have done that and added in your gingerbread spice, you can go ahead and now add in your wet ingredients! Mix with a spoon or fork until your dough has formed! You will want to use your hands to form it into a ball at the end!
Okay now for the best part! Flour your surface and your rolling pin with some more tapioca flour, I find this works best for non-stick! And begin to roll out your dough that you have shaped into a ball! Go from side to side to get an even layer! I roll mine out to be about 1/7″, I don’t like to do them too thin I like them to be a bit thicker because they come out cuter that way!
Once you have your dough rolled you can start to cookie cut your cookies! You can use any cookie cutter you like, I liked the option to have two different shapes! They might stick slightly to yout counter top so I like to use a spatula to help lift them off the counter other wise your gingerbread cuties might lose a limb like a couple of mine haha! You will have left over dough after your have cut out all your shapes, so roll that into a ball again and repeat the process until you have no dough left to roll!
Once you have all your cookies cut out, place them on a baking sheet and, and place in the oven at 375 degrees for 8 minutes! They start to smell soooo good and will truly make your home smell like Christmas! You definitely don’t want to over bake the cuties so just make sure to check them right at 8 minutes! That has been the perfect time for mine!
Now you don’t have to decorate them with icing but I just couldn’t resist! You can also half dip them in chocolate or do a chocolate drizzle or just eat them as is! But because they are gingerbread man cookies I had to add some buttons and some decor to the snowflakes! But this is totally up to you, either way they taste sooo yummy and are the perfect classic Christmas cookie! See recipe below for icing recipe details!
I seriously kept it so simple with the icing, all I did for the gingerbread men was three little buttons going down, as cute little dots and hearts! and for the snowflakes I just free handed different designs as I went! I think they turned about super cute, I need to work on my icing skills though haha! Here is a short video of me making mine <3

Healthier Gingerbread Man
Ingredients
- 1 egg or flax egg 1 tbsp flax meal with 3 tbsp water
- 1 tbsp maple syrup or honey
- 2 tbsp molasses
- 1 tsp vanila
- 1 cup almond flour
- ½ cup oat flour
- 2 tbsp Tapioca flour
- 3 tbsp coconut sugar
- 1 tsp baking powder
- ½ tsp sea salt
Gingerbread Spice
- 2 tsp cinnamon
- 2 tsp ginger
- ½ tsp nutmeg
- ½ tsp ground cloves
Royal Icing
- 1 cup monkfruit sweetener or powdered sugar
- 3 tbsp almond milk or water
- 2 tbsp meringue powder
Instructions
- Preheat your oven to 375°
- Mix your egg or flax egg with your vanilla and maple syrup or honey, now add your molasses and whisk all together and set aside
- Sift together your flours, baking powder, coconut sugar, and sea salt to get a smooth texture (it's ok if you don't have a sifter I find it just helps with the texture) now add you gingerbread spice and mix it together
- Now add your wet ingredients that you set aside to your dry ingredients and mix with a spoon or fork until a dough forms! Form this into a ball with your hands
- Flour your surface with tapioca flour as well as your rolling pin and begin to roll out your dough to be about 1/7" ( I don't like mine to0 thin) and begin cutting out your cookies!
- Place your cookies on a baking sheet and bake for 8 minutes (do not over bake!!) Ice your cookies or dip them or drizzle them with chocolate & enjoy!
