Healthier Gingerbread Man

These Gingerbread Man Cuties are a healthier spin on a Christmas cookie classic, and you just can't go wrong with them! They are incredibly easy and delicious with the perfect gingerbread spice! Soft and chewy and perfect for your holiday baking!

Ingredients

  • 1 egg or flax egg 1 tbsp flax meal with 3 tbsp water
  • 1 tbsp maple syrup or honey
  • 2 tbsp molasses
  • 1 tsp vanila
  • 1 cup almond flour
  • ½ cup oat flour
  • 2 tbsp Tapioca flour
  • 3 tbsp coconut sugar
  • 1 tsp baking powder
  • ½ tsp sea salt

Gingerbread Spice

  • 2 tsp cinnamon
  • 2 tsp ginger
  • ½ tsp nutmeg
  • ½ tsp ground cloves

Royal Icing

  • 1 cup monkfruit sweetener or powdered sugar
  • 3 tbsp almond milk or water
  • 2 tbsp meringue powder

Instructions

  • Preheat your oven to 375°
  • Mix your egg or flax egg with your vanilla and maple syrup or honey, now add your molasses and whisk all together and set aside
  • Sift together your flours, baking powder, coconut sugar, and sea salt to get a smooth texture (it's ok if you don't have a sifter I find it just helps with the texture) now add you gingerbread spice and mix it together
  • Now add your wet ingredients that you set aside to your dry ingredients and mix with a spoon or fork until a dough forms! Form this into a ball with your hands
  • Flour your surface with tapioca flour as well as your rolling pin and begin to roll out your dough to be about 1/7" ( I don't like mine to0 thin) and begin cutting out your cookies!
  • Place your cookies on a baking sheet and bake for 8 minutes (do not over bake!!) Ice your cookies or dip them or drizzle them with chocolate & enjoy!
