Chocolate Covered Cherries

These Chocolate Covered Cherries are one of my favourite things to keep in the freezer all summer long. They're simple, elegant, and endlessly versatile—perfect for topping vanilla ice cream, serving on a summer charcuterie board, or as a sweet bite to end a romantic date night.

Ingredients

  • 4 cups fresh cherries
  • 1 cup dark chocolate
  • 1 tbsp coconut oil
  • flakey sea salt

Instructions

  • Wash and pat your cherries dry! Leave the stem on for easy dipping and twirling! Line a baking sheet with parchment and place your cherries on the sheet, place in fridge for 5-10 minutes before dipping to chill (not freeze)
  • Melt your chocolate and coconut oil over low heat in a small saucepan stirring until smooth and glossy. Remove from heat and allow to cool slightly before dipping.
  • Remove your cherries from the freezer, and dip in the chocolate, twirling the excess chocolate with the stem off before placing on the lined baking sheet (this avoids the lip of chocolate). Continue with each cherry! Sprinkle with flakey sea salt and place in freezer to harden for 20 minutes! Store in fridge or freezer!
