  • ⅓ cup filtered water
  • Greek yogurt of choice

cinnamon crunch granola

  • ½ cup old-fashioned oats
  • 3 tsp honey divided
  • 1 tbsp psyllium husk
  • 1 tbsp flaxseed
  • 1 tsp cinnamon
  • ¼ tsp sea salt
  • Optional: almond butter, nuts and seeds for topping

Instructions

  • Add the oats, honey, cinnamon, psyllium husk, flaxseed, sea salt, and filtered water to a frying pan over medium-high heat. Stir constantly for approximately 5 minutes, until golden, sticky, and fragrant.
  • Transfer the granola to a plate, pressing into a thin disc. Place in the freezer to crisp while preparing the apples.
  • Dice the apple and cook in a frying pan with a little water, cinnamon, and honey until softened and lightly caramelized. Cook on medium/high heat for 5-10 minutes, stirring constantly.
  • Add a generous scoop of Greek yogurt to a bowl. For extra protein, mix in your favorite vanilla protein powder. Spoon the warm stewed apples over the yogurt. Break the chilled granola into crunchy clusters and sprinkle over top. Finish with almond butter, a drizzle of honey, flaky sea salt, and optional nuts or seeds. Enjoy immediately!
