Summer Salad Rolls with Thai Peanut Sauce

My ALL time favourite summer dinner, fresh salad rolls! These summer Salad Rolls with Thai Peanut Sauce are probably one of my most requested dinners and appetizers! They’re fresh, light, so flavourful and delicious! My Thai peanut sauce is to die for, I mean who doesn’t love a good peanut sauce! I promise you, you’ll fall in love with this one! These salad rolls are so easy to prep, make and make for the most perfect addition to any summer dinner party or just a perfect summer dinner! I can’t wait for these to be your newest obsession! They’re definitely mine, I just think they’re so beautiful, fresh and vibrant looking!

What You’ll Need
These couldn’t be more simple and fun to make! I have listed out everything I like to put in my summer salad rolls below! You can pretty much add in any veggies you like or omit any you don’t like! If I have more time I always love pickling some red onion and cabbage for some beautiful tang and its so good, but sometimes I don’t have this on hand and they are just as good with fresh veggies like I have listed here! I love adding in fresh summer herbs from the garden such as mint, basil, and cilantro! I find it really elevates the salad rolls and adds in so much flavour and freshness! You can go with or without adding in protein, my favourites are shrimp, tofu or chicken! If this the salad rolls are my main dinner menu item, I almost always have a protein as an option so you’re getting properly fuelled with this light dinner!

Making the Summer Salad Rolls & Thai Peanut Sauce
I like to start off by making my Thai peanut sauce so that its ready to go right after making all the rolls! To do this I either add all my ingredients to a blender or a bowl and mix together! A blender is definitely easier, but if you don’t have one on hand not to worry it’s totally fine to just use a whisk or a spoon! If your sauce is too thick start by adding a little bit of warm filtered water to thin it out until you reach your desired consistency!



Next prep all your veggies and protein! Thinly slice your veggies into long length wise strips so they fit nice inside the salad rolls! When I made these they were an appy, so I didn’t do a protein! But typically I would sauté some shrimp in butter and spices, or do some crispy tofu to add in! Wet you rice paper wrap for 10 seconds and place down on a plate or cutting bored! Place your fresh veggies and protein in the centre leaving room at the top and bottom! **be careful not to overfill these or they break and don’t wrap nicely!


To wrap them start by pulling the bottom up away from you and roll it towards the centre, then pull both of the sides in, and continue rolling away from you to create a wrap! Dip the summer salad rolls in the Thai peanut sauce and taste the freshness and beautiful vibrancy from these fresh summer salad rolls!




Just looking at that peanut sauce makes me crave it so bad, it’s literally so dreamy with all the fresh veggies and herbs together!! Even better when you add in shrimp, chicken or tofu!! YUM! Summer Salad Rolls with Thai Peanut Sauce
These summer salad rolls are fresh, delicious and nourishing! The perfect summer snack, lunch, or appetizer! The Thai peanut sauce takes these to a whole new level and the combination of both the salad rolls and the peanut sauce is just so satisfying!
Ingredients
Thai Peanut Sauce
- ½ cup natural peanut butter or any nut butter
- 4 tbsp tamari
- 3 tbsp rice vinegar
- 1 tbsp fresh minced garlic
- 1 tbsp fresh minced ginger
- 1 juice of a lime
- ¼ cup warm filtered water
- 2 tsp Eversio Mushroom Blend
- 2 tsp red chilli flakes optional for spice
Summer Salad Rolls
- rice paper wraps
- carrots
- cucumbers
- peppers
- fresh basil leaves or other herbs
- butter lettuce
- avocado
- protein of choice if desired chicken/prawns/tofu
Instructions
- To make your make the Thai Peanut Sauce add all the ingredients into a large bowl and mix it together! Or add everything to a blender! If it’s too thick, and a little more water little by little! Slice & prep your veggies and protein!
- Wet your rice paper wrap by dipping it fully under water for 5-10 seconds! Lay it flat on a plate and add in your sliced veggies and protein into the center of the wrap! Don’t overfill it or it’s hard to wrap and they break!
