These summer salad rolls are fresh, delicious and nourishing! The perfect summer snack, lunch, or appetizer! The Thai peanut sauce takes these to a whole new level and the combination of both the salad rolls and the peanut sauce is just so satisfying!

Ingredients

Thai Peanut Sauce

  • ½ cup natural peanut butter or any nut butter
  • 4 tbsp tamari
  • 3 tbsp rice vinegar
  • 1 tbsp fresh minced garlic
  • 1 tbsp fresh minced ginger
  • 1 juice of a lime
  • ¼ cup warm filtered water
  • 2 tsp Eversio Mushroom Blend
  • 2 tsp red chilli flakes optional for spice

Summer Salad Rolls

  • rice paper wraps
  • carrots
  • cucumbers
  • peppers
  • fresh basil leaves or other herbs
  • butter lettuce
  • avocado
  • protein of choice if desired chicken/prawns/tofu

Instructions

  • To make your make the Thai Peanut Sauce add all the ingredients into a large bowl and mix it together! Or add everything to a blender! If it’s too thick, and a little more water little by little! Slice & prep your veggies and protein!
  • Wet your rice paper wrap by dipping it fully under water for 5-10 seconds! Lay it flat on a plate and add in your sliced veggies and protein into the center of the wrap! Don’t overfill it or it’s hard to wrap and they break!
  • Start by pulling the bottom up away from you and roll it towards the center, then pull the sides in, and continue rolling away from you to create a wrap! Dip the summer salad rolls in the Thai peanut sauce and enjoy 🤍
