These summer salad rolls are fresh, delicious and nourishing! The perfect summer snack, lunch, or appetizer! The Thai peanut sauce takes these to a whole new level and the combination of both the salad rolls and the peanut sauce is just so satisfying!

Thai Peanut Sauce
½cupnatural peanut butter or any nut butter
4tbsptamari
3tbsprice vinegar
1tbspfresh minced garlic
1tbspfresh minced ginger
1juice of a lime
¼cupwarm filtered water
2tspEversio Mushroom Blend
2tspred chilli flakes optional for spice

rice paper wraps
carrots
cucumbers
peppers
fresh basil leavesor other herbs
butter lettuce
avocado
protein of choice if desired chicken/prawns/tofu
Instructions
To make your make the Thai Peanut Sauce add all the ingredients into a large bowl and mix it together! Or add everything to a blender! If it’s too thick, and a little more water little by little! Slice & prep your veggies and protein!
Wet your rice paper wrap by dipping it fully under water for 5-10 seconds! Lay it flat on a plate and add in your sliced veggies and protein into the center of the wrap! Don’t overfill it or it’s hard to wrap and they break!
Start by pulling the bottom up away from you and roll it towards the center, then pull the sides in, and continue rolling away from you to create a wrap! Dip the summer salad rolls in the Thai peanut sauce and enjoy 🤍
