Strawberry Chocolate Fudge

With strawberry season officially here, I couldn’t resist celebrating with this dreamy and delightful strawberry chocolate fudge! You know those recipes that are just so easy, yet somehow still make you feel like a wellness goddess in the kitchen? This is one of those. It’s rich, chocolatey, and slightly salty—but still fresh, light, and summery thanks to juicy strawberries and creamy coconut. It’s basically elevated chocolate covered strawberries, but laced with that creamy coconut flavour and decadent fudge texture. The best part? Just 4 ingredients (plus a pinch of flaky salt) and no baking required. Yes please.

🍓 This is a Strawberry Chocolate Fudge yes, but with Benefits …
This recipe is basically fudge meets chocolate bark, but elevated with a splash of coconut cream and a spoonful of Eversio’s 4 Mushroom Blend for that subtle earthy depth and a gentle mood-boosting bonus. You won’t taste the mushrooms, but your body, mind and soul will love them. It’s the kind of dessert I keep stashed in the freezer all summer long—perfect for when you want something sweet but also want to feel good after eating it.

What You’ll Need
There’s something so satisfying and so sweet about these simple ingredients coming together. Fresh strawberries and chocolate is an iconic duo, we all know this… BUT if you feeling fancy or what to have a little fun with this recipe you can totally swap out the fruit to cherries, blueberries or raspberries! Maybe add a little nut butter like almond butter or peanut butter for a rich, nutty twist! These little ingredients swaps make the recipe totally flexible for whatever you’re in the mood for! I’m totally doing a peanut butter, chocolate & strawberry combo next…

Making the Strawberry Chocolate Fudge
Wash and prep all your strawberries. I use sliced halves around the edges (aligning the cut side along the edge of the dish), and full ones to cover the middle for the beautiful strawberry look at the end! Start by lining a small baking dish with parchment paper, then layer your sliced strawberries across the bottom. You don’t need to be too precise here—just enough to cover the base with a juicy, fruity foundation.

In a small pot or double boiler, gently melt the dark chocolate chips with the coconut oil and mushrooms. Once it’s smooth and glossy, take it off the heat and stir in the coconut milk . The mixture should be rich, silky, and just slightly thick and fudge like. NOTE – I used about 16 strawberries, this may differ depending on the size dish you use -use less or more chocolate accordingly to your strawberry amount!
Pour the warm chocolate fudge mixture over your strawberries and use a spatula or spoon to spread it out evenly, make sure it gets into all the corners and cracks in-between the strawberries. Add a few more strawberry slices on top—this gives it that extra aesthetic look, and makes each bite feel a little more special. Finish with a sprinkle of flaky sea salt for that perfect salty-sweet balance.

Pop the dish into the freezer for a few hours, or until the fudge is completely set. Once it’s firm, slice it into squares and stash them in an airtight container in the freezer. They’ll keep for weeks… though if you’re anything like my family, they’ll be gone way sooner…

Isn’t it so gorgeous! What the most beautiful and gorgeous way to celebrate the start of strawberry and summer season… I mean it doesn’t get any more perfect than this Strawberry Chocolate Fudge!!!

This is one of those treats that feels luxurious but takes hardly any effort at all. That one recipe that you want to always have a batch tucked away for that afternoon sweet tooth or a cozy little moment after dinner— sometimes we all just need that. I’ll be honest my favourite place to eat one is in a candle lit bath, with my cup of peppermint tea! There is just no better combo than this strawberry chocolate fudge! I can’t wait for you to try it… hurry while strawberry season is in full bloom it makes such a difference in the juiciness and flavour!
I love you,
