Matcha & Coconut Ice Cream
I don’t know about you, but I am in LOVE with matcha! I don’t drink coffee but I could always go for a delicious matcha latte! With that being said, I also love to use matcha in desserts and incorporate it in fun ways! I’ve also made these delicious matcha bars you can check out here! BUT this time we really did go there and make matcha & coconut ICE CREAM! I can’t believe I’ve never made ice cream at home before it’s actually so simple, and you can use clean ingredients which makes it even better! This matcha ice cream is heavenly, It’s like a matcha latte but in Ice cream form lol! It’s creamy, soft and perfectly sweetened using raw honey! I add a dash of cinnamon and sea salt, a little lemon juice and vanilla and WOW! It’s shocking how good it is, and how much it reminds me of getting matcha gelato which is one of my favourite flavours!

Making the Matcha Coconut Ice Cream
This Matcha Coconut Ice Cream is very easy to make you will be shocked! I can’t believe it’s taken me this long to use matcha to make an ice. cream because it’s one of my go to flavours any time I get ice cream! First you will start by whipping your coconut cream until light and fluffy! Make sure this is full fat and has no additives like guar gums etc! Set this aside, and in another large bowl add your coconut milk (you can change this for almond milk), I just love the coconut flavour that’s why I use coconut for both instances! Sift your matcha into the coconut or almond milk, along with your mushroom powder or any health additives and whip this all together!
Now add your honey, vanilla, lemon juice ( just a little for a nice lemony kick), a little dash of cinnamon and a sprinkle of sea salt! Do one last final mix and taste test to see if you want it any sweeter! Now you can pour your matcha mixture into your whipped coconut cream! This part is soooo satisfying! Incorporate this into the cream and pour it into a baking dish and place it in the freezer to harden! This takes about 1-2 hours! This matcha coconut ice cream is simple, refreshing and so easy to make, I can’t wait for you to try it for yourself! What ice cream flavour should we test next!!

Matcha Coconut Ice Cream
Ingredients
- 1 can coconut cream no additives
- 1 can coconut milk or 1 cup almond milk no additives
- 2-3 tbsp matcha powder
- ¼ cup honey or maple syrup
- ½ tsp vanilla
- 1 pinch sea salt
- 1 squeeze lemon juice
- 1 dash cinnamon
- 1 tsp eversio rejuvenate mushroom blend
Instructions
- Open your can of coconut cream and place this in a bowl and using a hand held mixer, whip this together until soft and creamy and set this aside
- Open your can of coconut milk into a large bowl, add in your matcha powder, mushroom blend, and whip this all together. Now add in your honey or sweetener of choice
- Pour your matcha mixture into your whipped coconut cream and mix this all together. Add in your dash of cinnamon, pinch of sea salt, splash of vanilla, and a little squeeze of lemon and pour this into a baking dish to set.
- Taste test and see if you need any more sweetness! Place this is the freezer to harden for about 1 hour!
