Honey & Chai Spiced Granola. Four words I would be just fine hearing over and over again. If there was one thing that I could make time and time again in the fall season it’s homemade granola! It just can’t be beat! I don’t care how much your love your store bought granola, when you home-make it, it just tastes SO much better! If you want to test me on that, this honey and chai spiced granola is the perfect fall recipe to try! Trust me, it will become a staple recipe for you! I’ve already gone through two batches! I’m obsessed! Fall is my favourite season for many reasons! The fashion, the cozy and cute sweaters, the yummy & warming recipes, Chai lattes of course… the list goes on! I knew I wanted to do another granola recipe this fall, and when I was deciding on the flavour I thought about my favourite things that remind me of fall recipes, and of course a Chai Latte sweetened with honey was the first thing that came to mind, and it’s what inspired this Honey and Chai Spiced Granola that I’m sharing with you today! Last fall I made this Chocolatey Cinnamon Coconut Granola, it’s also just as divine! You really can’t go wrong with either for the perfect fall granola recipe!
But let me just tell you that this honey and chai spiced granola is perfectly spiced with hints of warming Chai, it’s sweet and still a little salty. Say no more. It also comes out super chunky with an incredible texture, which we all know is essential when it comes to a good and satisfying granola! Another reason why homemade granola is just so superior to store bought is because the ingredients are so much cleaner and fresher! No added preservatives or natural/artificial flavours! You truly can taste the difference! If you want your home to smell of gorgeous hints of chai and cinnamon on a beautiful fall Sunday morning, than this honey and chai spiced granola is your new go to! I’m sorry but who wouldn’t want that? It sounds like an absolute dream to me, and trust me it is!
What You’ll Need
I am someone who adores nuts and seeds, they’re loaded with protein, fibres, healthy fats, vitamins and minerals! I try to incorporate into as many recipes as possible and snack on them throughout the day! That’s why this granola is jam packed with them which makes this the perfect snacking granola and topping to any yogurt or smoothie bowl! You can totally switch out any nut or seed for your favourite, or omit whatever! It’s still going to be perfection I promise! Making the Honey & Chai Spiced Granola
You might think that homemade granola must be complicated to make but I promise you, that couldn’t be farther from the truth! This takes all of 10-15 minutes to whip up, then another 15 minutes in the oven to bake! Then the secret trick to chunky and delicious granola is popping it right in the freezer after it bakes to harden in chucks for about 20 minutes! Then Voila, fresh delicious homemade granola! Here exactly how I make it!
Preheat your oven to 375°. I start by adding all my nuts and seeds into one large bowl, give it a good mix and make sure I have all my favourites in the bowl! Coconut, almonds and pecans are always a must for me when I’m making granola! Oh and macadamia nuts are so delightful in granola as well, but feel free to do your own favourite nut and seed mix, these are just my favourite!
For the beautiful chai coating, you will want to start off by adding your coconut oil and honey to a small sauce pan and place this over low-medium heat! Just so it melts together! Add in your chai spice blend, and give this a good whisk! You will start to smell the beautiful aromas of the chai spice blend! Allow this to simmer on low-medium heat to really pull the flavours out! Now add in your almond butter, sea salt and vanilla and whisk this in until it becomes melted and smooth! Once everything is creamy and mixed all together you can go ahead and pour your chai coating all over your nuts and seeds in your bowl! This is my favourite part! It’s so satisfying coating all the nuts and seeds in the chai coating, and don’t even get me started on the smell!
Line a large baking sheet with parchment paper, and evenly spread your granola out on it! Place your baking sheet in the oven for about 15-20 minutes! You will start to smell the honey and chai granola, you want it to be a beautifully golden brown! Be sure to keep an eye on it though, and continually be checking it as it’s in the oven baking! Depending on your oven, your granola might need a little less time or a little more! As soon as it comes out of the oven I like to drizzle it with some honey, and a sprinkle of flakey sea salt and I place it right in the freezer to harden and to create a chunky granola! It’s the best trick to chunky granola! I let is harden for about 20 minutes, then I dive right in and trust me it’s just so divine!
I store my granola in a sealed container and keep it in the freezer, it’s the perfect way to store it! It keeps it fresh and it unfreezes immediately once your snacking on it!
This granola is perfect for a little snack, on top of a beautiful yogurt bowl, or smoothie! I can’t get enough of it! I’m definitely going to go through many batches this fall season! Honey & Chai Spiced Granola
The most perfect homemade fall granola recipe! Inspired by a seasonal fall chai latte, naturally sweetened with honey! This honey & chai spiced granola is perfectly spiced with warming notes of chai, sweet, and yet a little salty! Say no more… the perfect snack or addition to any yogurt bowl!
Ingredients
- 1 cup almonds
- 1 cup cashews
- ½ cup macadamia nuts
- 1 cup pecans
- ½ cup pumpkin seeds
- ½ cup almond halves
- 1 cup flaked coconut
Chai Spice Blend
- 4-5 tsp cinnamon
- 3 tsp ginger
- 2 tsp cardamom
- 2 tsp ground cloves
- 1 tsp nutmeg
- 1 tsp all spice
Chai Coating
- ½ cup coconut oil
- ¼ cup honey
- chai spice blend
- ⅓ cup almond butter
- 2 tsp vanilla
- 1 tsp sea salt
Instructions
- Preheat your oven to 375℉
- In a large bowl add all your nuts and seed, and mix them together
- In a small sauce pan add your coconut oil and honey and put this over low-medium heat to melt together. Whisk in your chai spice blend, and let that simmer until you smell the fragrant notes of chai (about 3 minutes)
- Add in your almond butter, vanilla and sea salt. Mix this all together until smooth and creamy
- Once your chai coating is fully melted all together (it should be smooth and creamy), go ahead and pour this over your nuts and seeds in your large bowl and coat evenly
- Line a baking sheet with parchment paper, and spread your coated nuts and seeds out evenly on it. Place this in the oven for 15 minutes, or until just beautifully golden brown! be careful not to leave it in too long, and be checking it consistently throughout the baking time
- Once it's finished baking, add a drizzle of honey and a dash of sea salt over top. Then place it in the freezer right away for about 20 minutes to allow it to harden and to form chunks. Enjoy as a delightful snack, or as the perfect topping to your yogurt bowl, smoothie, or cereal!
