Preheat your oven to 375℉
In a large bowl add all your nuts and seed, and mix them together
In a small sauce pan add your coconut oil and honey and put this over low-medium heat to melt together. Whisk in your chai spice blend, and let that simmer until you smell the fragrant notes of chai (about 3 minutes)
Add in your almond butter, vanilla and sea salt. Mix this all together until smooth and creamy
Once your chai coating is fully melted all together (it should be smooth and creamy), go ahead and pour this over your nuts and seeds in your large bowl and coat evenly
Line a baking sheet with parchment paper, and spread your coated nuts and seeds out evenly on it. Place this in the oven for 15 minutes, or until just beautifully golden brown! be careful not to leave it in too long, and be checking it consistently throughout the baking time
Once it's finished baking, add a drizzle of honey and a dash of sea salt over top. Then place it in the freezer right away for about 20 minutes to allow it to harden and to form chunks. Enjoy as a delightful snack, or as the perfect topping to your yogurt bowl, smoothie, or cereal!
