Glamorous Lox Avocado Toast

Okay can we just talk about the colour of this Glamorous Lox Avocado Toast? I made this for my mom for brunch on Mother’s Day and I knew I had to share it because talk about the aesthetic you guys, it’s beautiful! I put together large platters of all the toppings and fixings and of course made it all pretty on the table with champagne and everything! This lox avocado toast made for the perfect brunch for our little gathering and celebration! You might think that this seems very complicated or fancy for you to put together but trust me, it’s so much simpler than you think and it will definitely wow your guests if you choose to serve this at brunch or even just to try on the weekend for fun! What is so great about serving this for brunch for multiple people is how quick and easy it is, because their is no cook time, its all just prep then build, BUT by the looks of it, it looks so fancy and high end! The flavour combination was also amazing, and you can get really creative with this too and really personalize your toast! My brother and dad added pouched eggs to theirs as well!

Making this Glamorous Lox Avocado toast

Okay like I mentioned I had made this lox avocado toast for a Mother’s Day brunch, so I put together a larger platter with all the toppings for everyone to use at their own will and build their own toast accordingly, it was the perfect idea and way to serve! I have listed all the toppings and fixings I used below! Don’t be scared to get creative here and add in anything else you can think of! I used a fresh loaf of sourdough bread and I just don’t think it could have been beat! If you’re just making this more casually and not for serving, obviously plating all your toppings isn’t going to be necessary and your job is a lot easier!

Okay now I will show you how to achieve the look I got for my Glamorous Lox Avocado Toast, it’s not as hard as you might think trust me! If you just follow these simple 4 steps pictured below you will be golden! Start with your base, your pesto or hummus, I like to do both! Then add your tomatoes and a little salt and pepper here! Then you can add your sliced avocado! Next add your arugula and then place your salmon on top. Finally, top with your pickled onions and sprouts and viola, you’re a chef! It really is just that simple!

This Glamorous Lox Avocado Toast is definitely a favourite for me, especially when it comes to hosting a brunch or gathering! It’s such a beautiful spread and the colours wow! You will definitely impress your guests! Glamorous Lox Avocado Toast

Colourful, glamorous avocado toast with all the toppings you could dream of! This Lox Avocado Toast is packed with flavour and is the perfect brunch or breakfast to serve for your guests or to amp up your weekend breakfast routine! You can get as creative as you like!

Ingredients

  • 1 loaf sourdough
  • 3-4 ripe avocados
  • pesto or hummus any spread
  • 1-2 large tomatos
  • arugula
  • fresh lox
  • sprouts
  • goat cheese
  • capers

pickled onions

  • 1 red onion
  • ¼ cup red wine vinegar
  • ¼ cup white wine vinegar
  • tbsp coconut sugar optional
  • sea salt
  • boiling water

Instructions

  • Start your pickled onions as soon as possible so they have time to sit prior to eating! Try to do this at least 1-2 hours in advance (best done the night before). In a mason jar add in your sliced red onion, red wine vinegar, white wine vinegar, sea salt, coconut sugar, top with boiling water and close and keep in the fridge. You can estimate amounts, doesn't need to be exact
  • If you are serving this as a brunch or breakfast for guests, start by plating all your toppings as I did in the pictures above, if not skip this step.
  • Toast your sourdough and begin by building your toast how you desire.
  • Start with your spread, pesto or hummus, then add your tomatoes, avocado, arugula, lox, sprouts, goat cheese, and capers!
