Probably the biggest chocolate chip cookie I have ever seen, I’m not kidding! I am so impressed with how this giant chocolate chip cookie turned out, and it tastes even better then it looks! Its chewy, yet soft but still dense to bite, its perfection! This giant chocolate chip cookie cake is perfect for any celebration, anytime you want to bake cookies but switch things up a little, or if your want to eat your cookie like a pizza haha! Let’s get into this ridiculously delicious chocolate chip cookie cake and how you can easily make one!

What You’ll Need

The ingredients required for this gain chocolate chip cookie cake are actually very minimal and easy! I have listed out some replacements as well if you have any dietary preferences!

melted butter or coconut oil

coconut sugar or brown sugar

date sugar or organic cane sugar

egg

organic WW pastry flour or oat flour

baking soda

sea salt

vanilla

dark chocolate chips

Making the Giant Chocolate Chip Cookie Cake

This giant cookie only take about 10 minutes to make, and the rest of the time you just have to practice penitence while it bakes! You only need one large bowl and a springform pan, mine was 20cm and it seemed to be the perfect size! First preheat your oven to 350 degrees! In your large bowl whisk your melted butter or coconut oil, and sugars together! Now add in your egg and whisk this in! Now add in all your dry ingredients including your flour, baking soda, sea salt and vanilla and of course your Eversio balance blend! Finally fold in your dark chocolate chips and line your springform pan with parchment paper and fill this with your cookie dough! Evenly spread it out and place it in the oven for 25-28 minutes for the perfect chewiness! This may depend on your oven but it should be done by the 30 min mark for sure! Allow it to cool for 10-15 minutes before slicing! Serve with your favourite vanilla ice cream and a dark chocolate drizzle! Voila! You’re very own giant chocolate chip cookie! It’s just so good! Basically a giant cookie cake! It's so chewy and has chunky chocolate chips throughout! Think like a pizza, but the most delicious and delightful cookie! Still soft yet dense on the inside, and topped with a chocolate drizzle and a scoop of coconut vanilla bean ice cream!

Ingredients

  • ½ cup melted butter or ½ cup coconut oil
  • ½ cup coconut sugar or brown sugar
  • ¼ cup date sugar or organic cane sugar
  • 1 egg
  • 1+¼ cup organic ww pastry flour or oat flour
  • ½ tsp baking soda
  • ¼ tsp sea salt
  • 1 tsp vanilla
  • dark chocolate chips

Instructions

  • Preheat oven to 350°
  • Place your melted butter, and sugars into a large bowl and whisk together
  • Now add in your egg, and whisk it in. Now fold in your flour, baking soda, salt, and vanilla
  • Add in chocolate chips and place into a 20cm springform pan lined with parchment paper
  • Bake for 26-28 minutes for the perfect chewiness (this may differ depending on your oven- I would say by 30 minutes its done and don't go over this)
  • Allow it to cool for 10-15 minuted before slicing, serve with vanilla ice cream and a dark chocolate drizzle
