Fresh Arugula Salad – Fig, Beet & Goat Cheese with a Honey Balsamic Vinaigrette
Beet, Goat Cheese & Fig Arugula Salad
The most satisfying & flavourful Arugula summer salad! With beets, goat cheese, figs and more! The perfect balance of savoury and sweet with a honey balsamic vinaigrette!

Ingredients
Arugula Salad
- fresh arugula
- 1-2 large beets boil your beets in a pot of water for 30-40 minutes or until soft, peel & chop into cubes
- 8-10 fresh or dried figs
- fresh pomegranate seeds
- toasted walnuts toast walnuts with sea salt and a little honey
- goat cheese
- green olives
- fresh dill
Honey Balsamic Vinaigrette
- ⅓ cup olive oil
- ¼ cup balsamic vinegar
- 1 tbsp raw honey
- ½ tbsp minced garlic
- 1 tbsp fresh chopped dill
- ½ tbsp freshly squeezed lemon juice
- 2 tsp eversio 6 mushroom blend
- salt & pepper to taste
Instructions
- In a small bowl combine all your salad dressing ingredients, taste test and add salt and pepper to your liking!
- Place your arugula into a large salad bowl and pour some of your dressing leaving some left over. Toss the arugula until it's fully coated in the honey balsamic dressing!
- Top your arugula with your softened & chopped beets, toasted walnuts, figs, pomegranate seeds, goat cheese, olives, and some fresh dill
- Pour more of the honey balsamic dressing over top and serve!
