Ingredients
Arugula Salad
fresh arugula
1-2large beets boil your beets in a pot of water for 30-40 minutes or until soft, peel & chop into cubes
8-10fresh or dried figs
fresh pomegranate seeds
toasted walnuts toast walnuts with sea salt and a little honey
goat cheese
green olives
fresh dill
Honey Balsamic Vinaigrette
⅓cupolive oil
¼cupbalsamic vinegar
1tbsp raw honey
½tbsp minced garlic
1tbspfresh chopped dill
½tbsp freshly squeezed lemon juice
2tspeversio 6 mushroom blend
salt & pepper to taste
Instructions
In a small bowl combine all your salad dressing ingredients, taste test and add salt and pepper to your liking!
Place your arugula into a large salad bowl and pour some of your dressing leaving some left over. Toss the arugula until it's fully coated in the honey balsamic dressing!
Top your arugula with your softened & chopped beets, toasted walnuts, figs, pomegranate seeds, goat cheese, olives, and some fresh dill
Pour more of the honey balsamic dressing over top and serve!
