Chocolate Fudge Walnut Brownies (no-bake!)
These chocolate fudge walnut brownies are seriously no joke, I mean just look at them! They have the perfect combination of a gooey fudge with walnuts chunks, and a creamy soft chocolate ganache on top to finish! They resemble the perfect brownie, but heres the best part, these chocolate fudge walnut brownies are NO BAKE! They don’t need any bake time in the oven, and they are incredibly easy to make and use very simple and wholesome ingredients! So that means no need for eggs, flour or refined sugars and in my opinion which I might be slightly bias, these taste just so much better than any generic brownie out there! But you will have to try them out for yourself, so lets get into how to make these chocolate fudge walnut brownies!
Making The Chocolate Fudge Walnut Brownies
This recipe uses fairly simple ingredients and I usually have everything on hand for these Chocolate Fudge Walnut Brownies which makes it even easier to whip up a batch of these brownies! There are only two parts to this recipe and I’m still shocked at how much these taste like actual brownies baked in the oven! There is the bottom part, which is so fudgy and delicious and then the top part, which is a dark chocolate ganache! YUM! Everything you will need for this recipe I have listed right here for you!
Bottom Brownie Fudge
Almond flour
Coconut flour
Raw Cacao or Cocoa
Coconut oil
Pure maple syrup
100% Natural Peanut Butter
Walnuts
Sea salt
Dark Chocolate Ganache
Dark chocolate bar or chocolate chips
Coconut oil
Coconut cream (optional)
First you will start by making the bottom brownie fudge layer and it’s super easy, and once you are done that you place it in the freezer for about 20 minutes, and you are almost done! Start by adding your bottom brownie fudge ingredients into a large mixing bowl or food processor! Make sure to leave out your crushed walnut pieces until after, we will then fold them into the brownie batter! Once everything is mixed together you should have a brownie batter that is sticky and fudgy!
Now you can fold your walnut pieces into your brownie batter! Line a baking dish with parchment paper, keep in mind that the smaller your baking dish the larger and thicker your brownies will be! I like to use an 8″ baking dish for the perfect ratio! Once you have mixed in your walnut pieces, press your brownie batter into your lined baking dish and place it in the freezer for about 20 minutes to harden! Now we will move onto the top dark chocolate ganache layer!
Get your dark chocolate, coconut oil and coconut cream and begin by heating up a saucepan over low heat (make sure to keep this on very low heat the entire time!!!), add your coconut cream and let it soften and become liquid! Add in your dark chocolate chips! This will become fairly thick! Add in some coconut oil to help thin it out, make sure you still are doing this on low heat! If you don’t want to add coconut cream, you can just stick with coconut oil and chocolate, I find the addition of the coconut cream makes the top just perfect and adds some creaminess to the chocolate, but it tastes amazing either way!
Once you have melted your chocolate, take your brownie batter out of the freezer and pour your chocolate ganache over it! Place it back in the freezer for about 30min – 1 hour, or until the chocolate has hardened!
Once the chocolate has hardened you can take it out of the freezer and allow it to soften for about 30-40 minutes, and it will be the most perfect texture! You can of course eat them when they soften sooner than that, but thats just my favourite way to eat these chocolate fudge walnut brownies!

Chocolate Fudge Walnut Brownies
Ingredients
Bottom Brownie Fudge Layer
- 1 cup almond flour
- ¼ cup coconut flour sub for all almond flour
- ½ cup raw cacao or cocoa powder
- ¼ cup maple syrup
- ½ cup 100 % natural peanut butter
- ¼ cup melted coconut oil
- 1 tsp sea salt
- 1 cup crushed walnut pieces
Top Chocolate Ganache Layer
- 1 cup dark chocolate chips or your favourite chocolate bar I use both to get a thick top layer!
- 3 tbsp coconut oil
- 2 tbsp coconut milk or cream (thick part from can) optional
Instructions
- In a food processor or mixing bowl add all your bottom fudge layer ingredients except your crushed walnut pieces, and mix or pulse until combined!
- Once you have a fudge-ie brownie consistency, fold in your crushed walnut pieces! Now press this into an 8" baking dish, (the smaller the pan the thicker your brownies will be). Place this in the freezer to harden
- In a sauce pan over low heat (do not turn the heat up at all!), melt your coconut oil and chocolate together! I like to add a little bit of coconut cream or coconut milk to make it more of a ganache, but this is not necessary!
- Evenly pour your melted chocolate over top of your brownie layer, and place this back in the freezer to harden for about 1 hour! Allow to soften slightly before eating!
- Top with flakey sea salt and chocolate curls and enjoy! xx
