Ingredients
Bottom Brownie Fudge Layer
1cupalmond flour
¼cupcoconut flour sub for all almond flour
½cupraw cacao or cocoa powder
¼cupmaple syrup
½cup100 % natural peanut butter
¼cupmelted coconut oil
1tspsea salt
1 cupcrushed walnut pieces
Top Chocolate Ganache Layer
1cupdark chocolate chips or your favourite chocolate barI use both to get a thick top layer!
3tbspcoconut oil
2tbspcoconut milk or cream (thick part from can)optional
Instructions
In a food processor or mixing bowl add all your bottom fudge layer ingredients except your crushed walnut pieces, and mix or pulse until combined!
Once you have a fudge-ie brownie consistency, fold in your crushed walnut pieces! Now press this into an 8" baking dish, (the smaller the pan the thicker your brownies will be). Place this in the freezer to harden
In a sauce pan over low heat (do not turn the heat up at all!), melt your coconut oil and chocolate together! I like to add a little bit of coconut cream or coconut milk to make it more of a ganache, but this is not necessary!
Evenly pour your melted chocolate over top of your brownie layer, and place this back in the freezer to harden for about 1 hour! Allow to soften slightly before eating!
Top with flakey sea salt and chocolate curls and enjoy! xx
Notes
If your brownie batter isn't staying together well enough add either more coconut oil or peanut butter! If your chocolate ganache becomes too thick, thin it out with some coconut oil! Make sure to never turn the heat up throughout this process!
