Creamy Coconut Matcha Bars (raw & no-bake)

This one is for all my matcha lovers! If you have a love for matcha lattes or anything flavoured matcha you will certainly be making a batch of these beautiful Creamy Coconut Matcha Bars very soon! They have the perfect ratio of creamy coconut matcha on top, and a deliciously sweet crust to finish off your bite! They hit just the right spot when you are craving something sweet but still are packed with healthy nutrients. These Creamy Coconut Matcha Bars require no bake time and are a raw dessert which makes them even easier and healthier to make! These were such a huge hit when I first made them and people were shocked at their creamy texture! The taste kind of reminds me of matcha gelato, which I mean come on how can you say no to that! So so good! I can’t wait for you to try them out, they couldn’t be easier! Just one thing to note is the cashews will need to be soaked for 4 hours or overnight previously to making these Creamy Coconut Matcha Bars!

Why I Love Matcha

There are so many reasons why I love Matcha! Firstly, its beautiful colour green makes it extremely beautiful and allows for you to make delicious and versatile creations in the kitchen. And another huge reason why I am such a matcha advocate is because of its obvious and plentiful health benefits! Matcha is extremely high in antioxidants and can help with brain functioning, heart health, and I can remember reading one time that apparently it’s 137 times greater than any other green tea in terms of its antioxidant qualities! Oh and also you can make it taste simply delicious, just like these Creamy Coconut Matcha Bars! It is also a great and healthy replacement if you are looking to lower your coffee drinking! I’m not a coffee drinker myself, Matcha is always my go to! I can’t wait to try out more desserts with Matcha and share them with you guys! Making the Bottom Bar

The crust in these Creamy Coconut Matcha bars couldn’t be easier to make and it’s also just so good! I’m not going to lie I ate a couple of teaspoons after I was done before I placed it in the freezer lol! What I also love about this is that it’s made from such good and wholesome ingredients! This crust is also great for a pie crust or any other dessert so feel free to use this for other recipes as well! Okay so all you will need is the items below, and simply add all the ingredients to your food processor and blend until you get a fully mixed crust! Line a square baking pan with parchment paper and press the crust into the pan and place in the freezer while we next prepare the Creamy Coconut Matcha filling!

I always add a little extra coconut at the end! If you want to make your Creamy Coconut Matcha Bars have a really amazing thick ratio of both the Bottom Bar and the Matcha Topping I double the Bottom part of this recipe!

Creamy Coconut Matcha Topping

Ok just warning you this is highly addictive! This filling is probably one of my most favourite matcha flavoured desserts or treats I have ever had! It’s creamy, soft and perfectly sweetened and it’s just as easy as making the crust! You will need all of the ingredients below and simply place everything in a large blender or food processor! Make sure you are using soaked cashews because this will really change the texture of this creamy coconut matcha filling and allow it to be soft and creamy! After you have blended everything together you should get a beautiful filling that is soft but still holds its firmness. Take your crust out of the freezer and pour and spread the creamy coconut filling over top creating an even layer on top! Place it back in the freezer for about 4-6 hours to completely harden!

Serving Your Creamy Coconut Matcha Bars

After your Creamy Coconut Matcha Bars are done firming you can take them out of the freezer and begin to cut into squares or bars! I cut mine into squares just because I think they look cuter! I love to enjoy these with some tea or have them as a quick breakfast in the morning if I am in a rush, they are very versatile in that regard! These would be perfect to serve at a tea party or a cute brunch or lunch party for a sweet treat or light dessert!

Creamy Coconut Matcha Barss

These Creamy Coconut Matcha Bars are for all the matcha lovers out there! They have the perfect ratio of creamy coconut matcha filling and a sweet crust to finish off your bite! They are perfect as a light dessert, a quick breakfast bar or just as a snack!

Ingredients

Bottom Bar

  • 1 cup crushed walnuts
  • 8 dates
  • 2 tbsp coconut milk or nut milk
  • ½ cup shredded coconut
  • 1 tbsp honey or maple syrup
  • 1 tbsp nut butter
  • pinch sea salt

Creamy Coconut Matcha Topping

  • 1 cup soaked cashews
  • 1 cup full fat coconut milk (organic canned)
  • 2 tbsp pure maple syrup
  • 1 tbsp honey
  • 3 tbsp matcha
  • ½ tsp cinnamon
  • 1 splash of vanilla

Instructions

  • soak your cashews for about 4 hours or overnight

Bottom Bar

  • Crush the walnuts in your food processor until they are all crumbled and add in the rest of the crust ingredients and combine until a crust has formed. Spread and press into a lined square baking pan and place in the freezer while you prepare the filling.

Creamy Coconut Matcha Topping

  • In a blender or food processor place your cashews, coconut milk, maple syrup, honey, matcha and vanilla and blend until you get a creamy smooth filling.
  • Take your crust out of the freezer and evenly spread out the matcha filling over top, and place it back in the freezer for about 4 hours to firm up! Once the matcha has hardened you can serve! Top with flakey sea salt and a dash of cinnamon!
