Cinnamon Sugar Heart Pastries

It’s almost Valentine’s day which means I’m simply obsessing over all things heart shaped and these Cinnamon Sugar Heart Pastries are starting off my love for Valentine’s Day and I couldn’t be more in loveeeeeee with them! They’re so dainty, elegant, cute and most importantly delicious! The dough is thinly rolled so its soft but golden browned, a little flakey but still gooey with cinnamon sugar! The heart shaped look is so perfect, I don’t think I’ve loved a pastry this much ever! These cinnamon sugar heart pastries are simple to make and so worth it! They are the perfect addition to a Galentine’s celebration, a Valentine’s Brunch, or for dessert, I can’t wait to make them again for those! I of course had to make mine with sourdough dough, but you could use any dough/ pastry dough recipe and it will still be absolutely delicious! I love the health benefits and the taste of using sourdough in my baking that’s pretty much all I use when it comes to baking! It totally enhances flavour and richness in your baking! What You’ll Need
Like I mentioned earlier, I made a sourdough pastry dough for these cinnamon sugar hearts, but you could use any dough recipe, or your favourite cinnamon bun recipe! Anything will be delicious, just follow along with the steps after the dough has been made and risen! I love love love using sourdough in all my doughs, the natural yeast and fermentation process is so amazing to me, and so much better for you! It creates such a beautiful flavour while still being light and airy! If you haven’t tried baking with sourdough starter I would seriously suggest it! The dough ingredients are pretty simple and very straight forward and I get into how to make the dough below! You can totally use whole milk, or almond milk, I’ve used both and the both work great!

Sourdough Pastry Dough
organic pastry flour or all purpose flour
active sourdough starter
butter
milk
egg
cane sugar
salt
cinnamon sugar filling
grass fed butter
cinnamon
brown sugar
sea salt

Making the Cinnamon Sugar Heart Pastries
You will need to have about 4-6 hours to let your dough rise before making these heart pastries with my sourdough dough recipe, and trust me it’s so worth it! You can use any dough recipe you like, including dry or active yeast ones that only need about 2-4 hours to rise! I typically make my dough at 7am then start making the pastries at 11am, so I give it 4 hours to rise and it works perfect! So pick something that works for you and your schedule and when you want to have them freshly baked for! Start by making your dough, mixing all your dough ingredients together, adding the flour last. Give everything a good mix before adding your flour. Knead it in a stand mixer for 8-10 minutes with the hook attachment or by hand until you get a soft and smooth dough. Allow this to rise for 4-6 hours or until doubled in size. Keep in a warmed oven to speed up the process, but then allow the dough to cool before shaping and rolling!
Make your cinnamon filling in the meantime. Add all your filling ingredients together until you get a smooth paste. The softer and warmer your paste is, the easier it is so smooth onto your rolled dough! I like to warm mine up slightly before spreading it on my dough because it goes on much nicer and evenly!
Once your dough has doubled in size, preheat your oven to 350°, and divide it into 12 individual pieces and shape into little balls. One at a time, roll each one out into a thin flat circle and spread the cinnamon filling evenly across. I like to roll mine pretty thin to get lots of those beautiful layers within each heart shape!



Roll it up to get a long log, fold the log in half, and place it so the seems are facing the sides, and the fold is at the top, make a cut at the top of the folded side, leaving a few inches attached at the bottom. Open it up and you will see the heart, you can kind of mold it to get a more perfect heart shape with your hands! Repeat this process with all your dough balls, shaping into hearts!




Line a baking sheet with parchment paper and place your cinnamon sugar hearts evenly on it, brush them with an egg wash to get that beautiful golden brown pastry colour (1 egg with a splash of water). Bake for 20-22 minutes, until just golden brown and glossy. Allow them to set for about 3 minutes and serve warm. They of course can be re heated but I’m telling you they test the absolute best freshly warm from the oven! It’s absolutely heavenly..

They are perfectly golden brown, but the dough is still light and airy and so soft inside of all those layers! How cute is the heart shape, perfect for any Valentine's brunch, party or celebration…

Ingredients
Sourdough Pastry Dough
- 400 grams organic pastry flour or all purpose
- 200 grams active sourdough starter
- 150 grams milk almond or whole milk is what I use
- 75 grams softened grass fed butter
- 50 grams cane sugar
- 1 egg
- 6 grams sea salt
Cinnamon Sugar Filling
- ½ cup soft organic grass fed butter
- ½ cup organic brown sugar
- 2 tbsp cinnamon
Instructions
