75gramssoftened grass fed butter
50grams cane sugar
1egg
6gramssea salt
Cinnamon Sugar Filling
½cupsoft organic grass fed butter
½cuporganic brown sugar
2tbspcinnamon
Instructions
Start by mixing all your dough ingredients together, adding the flour last. Give everything a good mix before adding your flour. Knead it in a stand mixer for 8-10 minutes with the hook attachment or by hand until you get a soft and smooth dough. Allow this to rise for 4-6 hours or until doubled in size. Keep in a warmed oven to speed up the process.
Make your cinnamon filling in the meantime. Add all your filling ingredients together until you get a smooth paste.
Once your dough has doubled in size, preheat your oven to 350°, and divide it into 12 individual pieces and shape into little balls. Roll each one out into a flat circle and spread the cinnamon filling evenly across. Roll it up to get a long log, fold the log in half, and place it so the seems are facing the sides and the fold is at the top, make a cut at the top of the folded side, leaving a few inches attached at the bottom. Open it up and you will see the heart, you can kind of mold it to get a more perfect heart shape with your hands! Repeat this process with all your dough balls
Line a baking sheet with parchment paper and place your cinnamon sugar hearts evenly on it, brush them with an egg wash to get that beautiful golden brown pastry colour (1 egg with a splash of water). Bake for 20-22 minutes, until just golden brown and glossy.
