Chocolate Zucchini Muffins

The best chocolate zucchini muffins you will ever taste! They are the perfect texture, light and fluffy and so chocolatey! Made with wholesome ingredients and no refined sugars! You will LOVE them!

Ingredients

Wet Ingredients

  • 1 + ½ cup grated zucchini
  • 2 eggs or flax eggs flax eggs: mix 2 tbsp flax seed meal with 6 tbsp water and let it sit for 5 min
  • ½ cup runny almond butter
  • ¼ cup maple syrup or sweetener of choice I like honey
  • ¼ cup coconut sugar
  • cup melted coconut oil or avocado oil or olive oil
  • 6 tbsp almond milk mixed with 1 tbsp apple cider vinegar (buttermilk = fluffy muffin)
  • 1 tsp vanilla or a little more

Dry Ingredients

  • 1 + ½ cup almond flour
  • ½ cup oat flour
  • ½ cup raw cacoa or cocoa powder
  • 1 tsp cinnamon
  • ½ tsp sea salt
  • 1 tsp baking powder
  • ½ tsp baking soda

Instructions

  • Preheat oven to 350
  • Whisk all your dry ingredients together, except your chocolate chips
  • Whisk all your wet ingredients together, except your zucchini (don't remove the liquid from your grated zucchini)
  • Add your wet ingredients to your dry ingredients, and then fold in your grated zucchini and chocolate chips
  • Line a muffin tin with your muffin liners and fill each one close to the top
  • Bake for 22 minutes & Enjoy
