Ingredients
Wet Ingredients
1 + ½cupgrated zucchini
2eggs or flax eggs flax eggs: mix 2 tbsp flax seed meal with 6 tbsp water and let it sit for 5 min
½cuprunny almond butter
¼cupmaple syrup or sweetener of choiceI like honey
¼cupcoconut sugar
⅓cupmelted coconut oilor avocado oil or olive oil
6tbspalmond milk mixed with 1 tbsp apple cider vinegar (buttermilk = fluffy muffin)
1tspvanilla or a little more
Dry Ingredients
1 + ½cupalmond flour
½cupoat flour
½cupraw cacoa or cocoa powder
1tspcinnamon
½tspsea salt
1tspbaking powder
½tspbaking soda
Instructions
Preheat oven to 350
Whisk all your dry ingredients together, except your chocolate chips
Whisk all your wet ingredients together, except your zucchini (don't remove the liquid from your grated zucchini)
Add your wet ingredients to your dry ingredients, and then fold in your grated zucchini and chocolate chips
Line a muffin tin with your muffin liners and fill each one close to the top
