Chai Churro Mini Donuts (vegan)

Never have I ever been so obsessed with a recipe before… I mean these chai churro donuts taste like literal mini donus copycats, but wayyy healthier and better for you! & YES of course I added a chai twist on them because chai spice is my absolute favourite! I also LOVE churros because I love cinnamon so these chai churro mini donuts are seriously a dream come true for me! Plus, can we just talk about how freaking cute these chai churro donuts are? I mean… they’re mini little chai cinnamon sugar angels!! I’m obsessed with them! My chai churro donuts are inspired from @wellnesswithhoney ( I love her content!), from her apple cider vinegar donuts! They looked so good and the ingredients were so clean so I had to try them out, and they did not disappoint! I added my chai spice mix and created a chai cinnamon sugar coating and voila! Chai Churro Mini Donuts! I can’t wait for you to try them!

What You’ll need

The ingredients for these chai churro mini donuts are so simple and easy! You might be very surprised to know that the main ingredient that makes these donuts is apple cider vinegar! I know crazy! They still taste delicious don’t worry! It makes for a fluffy and airy donut! You can use apple sauce as an egg replacement which makes these cuties VEGAN!! You can still totally use an egg, I have made them both ways and each way is delicious! Using an egg will give you more of a fuller donut, bakery style, using apple sauce keeps it a bit more moist and doesn’t rise quite as much! I found the apple sauce ones a bit more yummy in my opinion!! I have listed out what you will need below!

oat flour

organic whole wheat flour

apple sauce or an egg

almond milk

coconut oil

coconut sugar

baking powder

baking soda

sea salt

vanila

CHAI spice: cinnamon, ginger, ground cloves, nutmeg & cardamom

Making the Chai Churro Mini Donuts

This recipe is super easy and won’t take you much time at all! First you will want to make your spice blend, it smells absolutely amazing!! If you don’t know by now, I am obsessed with chai! Chai lattes, chai lip balm, chai spice, chai soy wax candles, I LOVE it! So naturally I couldn’t pass up the chance to put a chai twist on these cute little mini donuts! & I’m telling you they are so good! Once you have your chai spice blend, or your choice of spices, add all your dry ingredients together, leaving out your coconut sugar! Now mix your wet ingredients together including your coconut sugar, but make sure to leave out your apple cider vinegar, we will add that later!

Now that you have your dry ingredients mixed together and your wet ingredients, add your dry ingredients to your wet and mix slightly! Now you can add the apple cider vinegar, and mixx until a wet batter is created! You will see air bubbles, it’s a sign of a light and fluffy donut!

Once you have your batter, you will want to fill a piping bag or do your best to get the batter evenly into your donut baking sheet! To get a full and risen donut make sure each donut is filled generously! Once your oven is preheated to 350 degrees, you can pop them in the oven for 12-15 minutes! I take mine right out at 12 minutes but this depends on your oven! They don’t take long to bake and you don’t want to overcook them either! The smell is seriously incredible… it’s chai heaven!

Cinnamon Chai Coconut Sugar Coating

Now for the best part! The cinnamon chai sugar coating! I know we added a chai twist to the donut batter, but I also wanted to have a chai hint in the sugar coating as well so I added cinnamon, and a little dash of cardamom & ground cloves for subtle chai spice! Once they have cooled from the oven you can start coating them! You will want to melt some coconut oil, and get your cinnamon chai sugar coating mixed mixed and ready with your spices! It’s soooo yummy! It’s a chai churro, like ur kidding!

Dip each donut individually into the melted coconut oil then straight into the cinnamon chai sugar coating flipping and rolling a couple times and pressing them down to get an even coating all around your donut!

These turned out so good, I have already gone through 2 whole batches!! I can’t wait for you to try these chai churro mini donuts! They literally could be mini donuts and they are soooo much better for you! I wasn’t totally sure how they would turn out, but oh my gosh I am literally so excited about these chai churro mini donuts! I hope you love them as much as I do! xx

Chai Churro Mini Donuts

These chai churro mini donuts are a mini donut copy cat, only better for you and have a delicious chai twist! Coated in a chai cinnamon coconut sugar and each bite is filled with a light, fluffy and airy donut! I am in love with these!

Ingredients

Wet Ingredients

  • 2 tbsp apple sauce or 1 egg
  • 1 tbsp melted coconut oil
  • ¼ cup almond milk
  • ¼ cup coconut sugar
  • ½ cup apple cider vinegar leave out of wet ingredients at start

Dry Ingredients

  • ½ cup oat flour
  • ½ cup whole wheat flour
  • ½ tsp baking soda
  • ¼ tsp baking powder
  • splash of vanila
  • dash of sea salt

Chai Spice

  • 2 tsp cinnamon
  • 1 tsp ginger
  • ½ tsp ground cloves
  • ½ tsp cardamon
  • ¼ tsp nutmeg

Cinnamon Chai Coconut Sugar Coating

  • coconut sugar
  • generous amount of cinnamon
  • dash of ground cloves of cardamon
  • melted coconut oil for dipping

Instructions

  • Preheat your oven to 350°. Mix your dry ingredients together including your chai spice blend (or your desired spices), and mix your wet ingredients together making sure to leave out your apple cider vinegar!
  • Add your dry ingredients to your wet ingredients and slightly mix together
  • Now add your apple cider vinegar and mix until a wet batter is formed! You will see air bubbles, that's a sign of light and fluffy donuts!
  • Fill a piping bag with the batter or do your best to evenly fill your donut mold baking sheet! Place in the oven and bake for 12-15 minutes! I take mine out right at 12 minutes!
  • Once they have slightly cooled, dip each donut in melted coconut oil, then the cinnamon chai sugar coating, flipping them a few times to get an even sugar coating! Voila!
