Here’s how to make the perfect heart shaped cooked skillet for Valentines Day

½ cup softened butter or ½ cup coconut oil
½ cup coconut sugar or brown sugar
¼ cup date sugar or organic cane sugar
1 egg
1+¼ cup organic ww pastry flour or oat flour
½ tsp baking soda
¼ tsp sea salt
1 tsp vanilla
1 tsp Eversio 4 MB
dark chocolate chips or chopped chocolate bar

Preheat oven to 350°
Place your softened butter, and sugars into a large bowl and beat or whisk together
Now add in your egg, and beat it in. Now fold in your flour, baking soda, salt, vanilla and mushroom blend.
Add in chocolate chips or chunks and place into a skillet or deep dish that can go into the oven! Cast iron works too!
Bake for 26-28 minutes for the perfect chewiness (this may differ depending on your oven- I would say by 30 minutes its done and don’t go over this)
Allow it too cool for 10 minutes before eating, serve with vanilla ice cream and eat while still warm from the oven 🤍

Here’s how I make my homemade pesto 🤍

Fresh Basil Pesto
1 cup packed fresh basil leaves
1 cup packed baby arugula
1/3 cup toasted pine nuts
1/4 cup nutritional yeast or grated Parmesan
4 garlic cloves
1 tsp @eversiowellness 6 mushroom blend
salt & pepper to taste
good squeeze of fresh lemon
Ice cube *keeps your pesto bright green & vibrant

pasta of your choice *save 1 cup salted pasta water
topped with olive oil, salt & pepper, red chilli flakes & fresh burrata

In a blender or food processor add in all your pesto ingredients. Pulse until well combined. Scrapping down the sides in-between pulses.
Cook your pasta in salted water, make sure to save pasta water. Drain and rinse when al dente. In a heated saucepan or frying pan add your desired amount of pesto and add a good splash of pasta water. Mix this then add your pasta. The pasta water will help coat your pasta and make it extra creamy. Taste test and see if you need more salt&pepper, or lemon juice!
Top with olive oil, red chili flakes, and fresh burrata

This is one of my all time favourite recipes 🤍 I can’t wait for you to try it!

butter
Flour
almond flour
monkfruit powder or powdered sugar
maple syrup
cinnamon
vanilla
sea salt

dark chocolate
coconut cream

Whipped Goat Cheese, Hot Honey & Walnut Crostini! This is one of my favourite savoury recipes to date especially for the holiday season…

The whipped goat cheese is so creamy and fluffy, flavoured with fresh thyme & oregano! Topped with honey salted walnuts and perfectly sweetened with a drizzle of spicy honey! All on top of a toasted garlic crostini! They’re divine, everyone always loveeeeees them! 🤍

I add in my @eversiowellness mushroom blends into all my recipes over the holidays! It doesn’t change the taste at all, which I love! It makes me so happy that’s those who enjoy all my cooking and baking get all the benefits! I especially lean on the rejuvenate blend during this time of the year for that extra glow from the inside out, it’s so rich in antioxidant! It’s a spa day for the cells!

Whipped Goat Cheese, Hot Honey & Walnut Crostini
~1 fresh baguette -olive oil & garlic for brushing

~Whipped Goat Cheese
300 gram plain goat cheese (1 log)
Fresh thyme & Oregano ( I do a little more than 1 tsp each)
1 tsp @eversiowellness rejuvenate blend
1 tbsp of your hot honey

~Hot Honey
1/4 cup runny honey, 2 tsp red chilli flakes, tiny splash apple cider vinegar for tang & a pinch of sea salt

Honey Salted Walnuts
1/3 cup chopped walnuts, good drizzle of honey so they’re sticky, 1 tsp sea salt (add based on preference)

Slice you baguette, brush with olive oil and garlic. Bake at 350 for 15-20 min. Golden brown! Chop your walnuts and add to a frying pan with the honey and sea salt! Toast on low/medium heat for about 10 minutes! Allow them to cool completely! Mix your hot honey ingredients together!

Place your goat cheese in a bowl with your finely diced thyme and oregano, hot honey, & sea salt! Whip it in a food processor, blender or hand mixer! Whip until creamy and smooth it took me about 4 minutes! Place this in a piping bag and pipe onto the toasted crostini, top with the walnuts, honey hot, fresh thyme or oregano!

These are soooo delicious & simply beautiful for any holiday occasion!

Cinnamon Bows for Christmas 🎀

One of the prettiest Christmas treats I’ve ever made, I love bows and Christmas so this is one of my favourite holiday recipes. The dough is soft, fluffy, airy and the cinnamon sugar filling is so warming. I made these with sourdough and it makes all the difference when it comes to how you feel after enjoying them, and it makes the most beautiful dough. If you don’t have sourdough starter you can still make these, just use your favourite dough recipe and follow along for the rest of the steps

Sourdough Cinnamon Bows 🎀
400 grams high quality bread flour
200 grams active sourdough starter
150 grams organic milk or almond milk
75 grams grass fed butter softened
50 grams organic brown sugar
1 egg
6 grams sea salt

** using high quality ingredients makes all the difference in how these taste and how you feel after enjoying these cuties. The fermentation process from using sourdough helps break down the gluten and adds prebiotic and probiotic properties.

~ cinnamon filling
75 grams grass fed butter softened
75 grams organic brown sugar
1 tbsp cinnamon

1 egg for egg wash

Start by mixing all your dough ingredients together. Add the flour last and mix before adding it in. Knead it in a stand mixer for 8-10 minutes with the hook attachment or by hand until you get a soft and smooth dough. Allow this to rise for 2-4 hours or until doubled in size. Make your cinnamon filling in the meantime.

Once your dough has doubled in size, divide it into 12 individual pieces. Roll each one out into a circle and spread the cinnamon filling evenly across. Fold the circle in half and create two slits on the folded side but not all the way to the top. Pull each side into the middle and wrap the middle piece up towards the center. (As shown in the video) repeat this for each dough ball. Allow them to rise for 30 minutes. Preheat oven to 350.

Brush each bow with the egg wash (1 egg whisked with a splash of water) and bake for 12 minutes. Until just golden brown. Allow them to cool, then dust with powdered sugar.

It’s cozy season which ultimately means soup season… thank goodness! This creamy cauliflower soup is my all time favourite soup, I can’t wait to make it every year when the weather starts to get colder! It’s thick, creamy and so nourishing! The flavour is also just bomb…

Here’s how to make my creamy cauliflower soup!

1-2 large heads of cauliflower
3 large leeks
1 yellow onion
3 small shallots
Fresh thyme spring
5 cloves crushed garlic
2 cups white/navy beans
4-5 cups high qualty vegetable broth
1 can coconut milk
3 tsp paprika
1 tsp cumin
@eversiowellness 4 Mushroom Blend
Salt & pepper

Prep and dice your onions, shallots, and leeks. Wash and chop your cauliflower into florets, and drain and rinse your beans!
Warm a large pot on low-medium heat with some olive oil or butter. Add your leeks, onions, shallots and some thyme springs, allowing them to cook for 5 minutes! Add salt here to really get all the flavours! Add your minced garlic and fresh thyme springs to your sautéed onions and stir! You will start to smell the beautiful aromatics! This creates a very flavourful soup! Now you can add your chopped cauliflower, white beans, coconut milk, and vegetable broth! I add enough just to cover the cauliflower and veggies in the pot to make sure its all submerged! You might need a little more or a little less depending on your amount of cauliflower! Add salt & pepper here! Cover and let simmer for 10-15 minutes!
Once the cauliflower has softened, remove the thyme springs and blend using a high speed blender or use a hand held immersion blender!
Taste test, add and adjust the flavour using salt and pepper! Add your cumin and paprika and a little squeeze of fresh lemon juice! Top with fresh thyme and drizzle of olive oil!

Fall & Granola. Two of my favourite things 🍂🧸🤎 This is my Cinnamon Maple Granola and it tastes like fall & coziness! With hints of warming cinnamon and a sweet & salty maple flavour…. It’s so delicious, simple and made with clean ingredients!

I’ve never had a store bought granola that I’ve liked more than my homemade granola recipes, they’re seriously sooo good! I always add in my @eversiowellness 3 mushroom blend to my granola coating to get all the medicinal mushroom benefits including that morning energy boost! Here’s my cinnamon maple granola recipe 🤎

CINNAMON MAPLE GRANOLA

~Granola  Mix
1 cup almonds
1 cup walnuts
1 cup flakey coconut
½ cup cashews
½ cup sliced almonds
½ cup pumpkin seeds
1/3 cup macadamia nuts
1 cup puffed quinoa

~Cinnamon Maple Coating
½ cup coconut oil 1/4 cup almond butter
2 tbsp cinnamon
1/3 cup 100% maple syrup
1 tsp sea salt
2 tsp vanilla

Preheat your oven to 375 degrees. Start by combing all your nuts and seeds together in one large bowl.
In a small sauce pan over medium heat add your coconut oil, almond butter, sea salt, and half of your cinnamon. Allow this to simmer together for 5 minutes! When it is off the heat, add the rest of the cinnamon to deepen the flavor, and your maple syrup! As well as your vanilla!
Pour the cinnamon maple coating over your bowl of nuts and seeds and mix until it’s fully coated!
Line a baking sheet and spread this out evenly, I always add a dash of sea salt on top.
Bake in the oven for 15 minutes until just golden brown! Always checking it because it burns easily, I check every 5 minutes! Let it cool for 5 minutes then place the baking sheet into the freezer for 30 min, to get those big chunks of granola! This is the secret to chunky granola! Store in freezer for best keeping!

Here’s how I make my favourite iced matcha latte and it turns out perfect every time

1- 2 tsp matcha powder
1/2 tsp @eversiowellness mushroom blend
1/4 cup hot water
1/2 cup almond milk
1 cup ice cubes
honey for natural sweetness
dash of cinnamon on top

Start by adding your matcha powder and mushroom blend to a measuring glass and then add your hot water! Use a whisk to blend together so it’s smooth! Fill your cup up with ice and pour your almond milk over the ice. Then finally pour your matcha over top of your iced almond milk to get that perfect mix! You can add honey or a sweetener, and I like to top mine with a dash of cinnamon 🤍🍵
