Peanut Butter Puff Bars, you’re kidding!! These peanut butter puff bars are highly addictive and just so yummy because what better combination than peanut butter and chocolate, you can’t name one!! They have a delicious sort of crunchy, yet soft peanut butter bottom, and the most perfect chocolate peanut butter ganache topping! These peanut butter puff bars are basically healthier rice crispy treats, but in my opinion so much better because duh, peanut butter & chocolate! They’re so easy to make, and the ingredients are so simple and wholesome you won’t even believe it! I love these peanut butter crunch puff because they’re perfect when you’re craving something a little more sweet during your day, the most delicious mid day pick me up because of the goodness from some of the ingredients I like to add in! Let’s make some peanut butter puff bars!

What You’ll Need

This recipe is sooo quick, and will not take you very long at all to make, and not long at all before you’ll have to make them again lol! The majority of the ingredients in these peanut butter crunch bars comes from the puffed quinoa, which you will mix with all the goodness such as peanut butter, honey etc! SO YUM! This makes your bottom layer! I love to add in some extra crushed peanuts for more of a crunch to these bars! The puffed quinoa is really soft and airy so the crunchy peanut butter and peanuts adds the perfect balance of crunchiness! I love to add some hemp protein powder too, and of course my eversio mushroom blend to the chocolate topping! I add these medicinal mushrooms to everything because of the incredible health benefits! Making the Peanut Butter Puff Bars

My peanut butter puff bars are one of new favourite healthy treats to make, because they’re so quick to make, and really only requires one big mixing bowl! All you have to do is mix your peanut butter, maple syrup, honey, coconut oil, protein powder, and splash of vanilla together in one large mixing bowl then add in your puffed quinoa! Mix in your puffed quinoa until it’s fully combined and covered in the peanut butter mixture! Try some and make sure its to your liking! If you add in protein powder here, you might need to add a little more maple syrup or honey to get it really sticky! You want your puffed quinoa to be very very sticky and well coated once it’s mixed, other wise your bars won’t stay together as your eating them!

after you have mixed your puffed quinoa into your peanut butter mixture, line a square baking dish with parchment paper so you can easily remove the bars, and fill it with the puffed quinoa mixture! Pack this down very tight, use the bottom of a jar or glass to get it flat and even! I like to go all out and sprinkle some more crushed peanuts over top for some extra added crunch! Keep in mind the smaller your baking dish, the thicker your bars will be! I don’t like when the bars are too thin, I use a 5″ by 7″ baking dish! Place your baking dish in the freezer to harden before we pour on the chocolate layer!

Melt you chocolate with some coconut oil on very low heat, and then add in some more peanut butter! This is my favourite part, peanut butter chocolate! This over top of the puffed quinoa mixture is just heavenly, the most perfect way to finish off your bite! Take your baking dish out of the freezer and pour your melted chocolate over top of your bottom layer! Evenly spread out the chocolate overtop of the puffed quinoa and place it back into the freezer to harden!

This will only take about 15 minutes to harden! You can then cut into squares and enjoy right away! So so easy and delicious! These peanut butter puff bars are the perfect way to enjoy a sweet treat, and they’re still packed with protein and so much goodness! I can’t wait for you to make them again and again!

Think rice crispy treat but 100x better! The combination of the peanut butter and chocolate is to die for, and the peanut butter bottom is soft and chewy, but still has a slight crunch with those peanuts! To finish off your bite is a fudgy peanut butter chocolate ganache topping!

Ingredients

Peanut Butter Crunch Bar

  • 3 cup puffed quinoa
  • ½ cup crunchy peanut butter
  • ¼ cup honey
  • ¼ cup maple syrup
  • cup melted coconut oil
  • splash vanila
  • protein powder

Chocolate Topping

  • 1 cup dark chocolate chips
  • 2 tbsp coconut oil
  • 2 tbsp peanut butter
  • eversio mushroom wellness blend

Instructions

  • Mix your peanut butter, maple syrup, honey, coconut oil, vanilla and protein powder all together in a large bowl, now add in your puffed quinoa and mix until fully combined. You want this to be really sticky and fully covered so if your adding in protein powder you might want to add more peanut butter or honey!
  • Line a square baking dish (5×7") with parchment paper and fill it with your coated puffed quinoa. Flatted it with the bottom of a glass to get it tightly packed and even! Place in the freezer to harden while we melt the chocolate
  • Melt your chocolate on low temp with coconut oil, Add in your peanut butter and this is where I add in my mushroom wellness blend!
  • Pour your melted chocolate over top of your peanut butter crunch bar, and place them back in the freezer just so harden (15 mins). Slice into squares and enjoy anytime!
