Start by preheating your oven to 350°. Whisk all your dry ingredients together. set aside while we mix the wet now.
In a large bowl, start by mixing your eggs, sugars, oil, and milk together until fully mixed. Now add your sourdough starter and vanilla and mix fully again.
Add your dry ingredients to your wet and begin to fold gently together until just combined. Now add your freshly brewed hot coffee! Mix again until fully incorporated and you have a smooth batter.
Grease a bundt pan or cake pan, and pour the cake batter into the pan evenly. Place in the oven for 35 minutes -don't go over 40 minutes! Allow it to cool for 15 minutes while we make the ganache
In a small sauce pan over low heat, begin melting your chocolate. Once fully melted, remove from the heat and add your coconut milk. Keep stirring until thick and smooth. It should still be able to run off the cake but have a more solid consistency. If its thick add a splash of milk, if its thin add a tiny bit more coconut milk.
Pour the ganache over the cake, & enjoy!
