Preheat your oven to 350°
Slice a thin layer off of the head of your garlics so you can just see each individual clove! Add them to a baking dish add your olive oil and spice mix over top. Place this in the oven for 20-30 minutes, or until soft!
While your garlic is cooking add your chickpeas, lemon, tahini, spices, and olive oil to a blender or food processor. Add your garlic cloves once thier done. Add about ½ of the olive oil from the baking dish that the garlic cooked in, and save the other half for on top of the hummus to serve!
Blend everything together! Add the ice cold water to get a creamy and smooth texture on your hummus. Add more depending on your desired consistency. Taste test to see if you need any more salt/pepper/spices!
Plate your hummus in a bowl or spread. Top it with more za'atar, that roasted garlic olive oil, roasted chickpeas, fresh herbs, or anything else you like! Or enjoy as is!
