Ingredients
The Granola
1 cupalmonds
1cupwalnuts
1cupflakey coconut
½cupcashews
½cupsliced almonds
½cup pumpkin seeds
⅓cupmacadamia nuts
1cuppuffed quinoa
Cinnamon Maple Coating
1cupcoconut oil
¼cupalmond butter
½cup maple syrup
2tbspcinnamon
1tspsea salt sprinkle more on top before/after the oven
2tspvanilla
Instructions
Preheat your oven to 375 degrees. Start by combing all your nuts and seeds together in one large bowl
In a small sauce pan over medium heat add your coconut oil, almond butter, sea salt, and half of your cinnamon. Allow this to simmer together for 5 minutes! When it is off the heat, add the rest of the cinnamon to deepen the flavour, and your maple syrup as well as your vanilla!
Pour the cinnamon maple coating over your bowl of nuts and seeds and mix until it’s fully coated!
Line a baking sheet and spread this out evenly, I always add a dash of sea salt on top
Bake in the oven for 15 minutes until just golden brown! Always checking it because it burns easily, I check every 5 minutes! Store in freezer for best keeping!
