The Best Beet Hummus & My Favourite Avocado Toast
WOW ok, I am so excited to share this recipe with you because it is seriously so so good! It combines two of my favourite foods in one. Avocado toast and of course one of my all-time favourite HUMMUS, I seriously could not live without hummus. I can eat that S*** with a spoon, no joke I just love it. Especially this homemade Beet Hummus, I can’t wait for you to try it! If you are a fan of avocado toast or hummus you’re going to fall in love with this recipe!
Making this Beet Hummus & Avocado Toast
So recently I have been making a lot of homemade hummus and playing around with flavours and let me tell you it is SO easy and fun. I have also discovered that store-bought hummus tends to have a lot of unnecessary ingredients like added preservatives or made with oils that aren’t actually that great for our bodies. This is usually because they are cheap to produce in large quantities or make their shelf life longer. But let’s not compromise our health for their manufacturing purposes, when we can easily and deliciously make our own hummus at home, and make it 10x better! Plus it’s so easy, all your going to do is throw all the ingredients I listed out below into your blender, and voila! Fresh authentic hummus! See recipe for full steps!
Another thing I love about hummus is that chickpeas have a very impressive health profile, and you will see that I cook with them all the time because of this! They are packed full of different vitamins and minerals that all support your health. They contain a high amount of vegetarian protein and fibre. The fibre is amazing for your gut and heart health, they also help sustain you in your meal because of this! What you can use chickpeas in is seriously amazing, they are probably one of my favourite things to cook with because of this! Chocolate brownies, hummus, savoury crepes, it’s seriously endless how you can chickpeas and even better they are good FOR you!
Ingredients for the Beet Hummus
You can always customize it to fit your preference! This is what I used to get this incredible Beet Hummus:
1 can of chickpeas
1 large beet (cooked & soft)
tahini
fresh lemon juice
roasted garlic heads
fresh herbs
cumin
coriander
onion salt
salt & pepper
You will want to roast your beet in the oven to soften it prior to making this hummus, it allows for such a beautiful colour and a much smoother texture in your hummus! I also roast my garlic cloves as well, this totally takes your hummus up a notch in terms of that fresh garlic flavour! Now all you seriously have to do is through all of these ingredients in a blender and give it a little taste test to make sure it doesn’t need any more salt and pepper or lemon juice! I always seem to add more in at the end!
Ingredients for the Avocado Toast
Now of course you can eat this beet hummus on its own with pita bread, greek night, veggies, or for any bowl really! But one of my favourite ways to use this beet hummus is on my avocado toast. YUM, I’m thinking about it right now. The flavours taste so delicious and fresh all together, and the salted and roasted pumpkin seeds add the perfect finishing touch! Here is how I make my favourite Avocado Toast with Beet Hummus:
fresh grain or sourdough bread from the bakery
large spread of the Beet Hummus
perfectly ripe avocado
goat cheese
radishes (totally optional for garnish)
roasted and salted pumpkin seeds
sesame seeds
sprinkle salt and pepper

The Best Beet Hummus Avocado Toast
Ingredients
Beet Hummus
- 1 large or 3 small beets cooked and softened
- 1 can chickpeas
- ⅓ cup olive oil
- ¼ cup tahini
- 3 tbsp lemon juice
- 2 heads roasted garlic
- 1 tsp cumin
- ¼ cup fresh herbs i like cilantro or parsley
- 4 tsp coriander
- 3 tsp onion salt
- salt & pepper to taste
Avocado Toast
- 2 ripe avocados
- fresh homemade beet hummus
- goat cheese
- roasted & salted pumpkin seeds
- sesame seeds
- 1 thinly sliced radish for garnish optional
Instructions
- Cut your beet or beets in half and place in the oven at 425° until soft (the skin should just peel off after cooked or peel them before). Place your garlic heads in the oven as well to roast until just soft and fragrant! Make sure to season both with olive oil, salt and pepper, and garlic salt
- Add all the ingredients for the beet hummus into the blender and blend until smooth and creamy.
- Taste test and adjust to your liking.
- If you are making the avocado toast, roast your pumpkin seeds in some avocado oil over medium heat, and sprinkle with sea salt and allow to get lightly golden brown! Build your avocado toast or enjoy the beet hummus as is!
