This Whipped Goat Cheese & Beetroot Salad is my favourite salad to date! It’s so fresh, earthy, and the honey lemon whipped goat cheese is beyond! Balsamic arugula and toasted sesame seeds in every bite… Everything about it is just so delicious

~Whipped Goat Cheese & Beetroot Salad~

5 large, cooked beets (mix of red & yellow) 
1 large log plain goat cheese 
½ tbsp honey 
1 tbsp fresh lemon juice 
½ tbsp fresh lemon zest 
½ tsp sea salt 
1 cup arugula 
balsamic glaze or olive oil & vinegar (to toss arugula in) 
TOPPINGS 
sprinkle toasted sesame seeds, honey & balsamic drizzle, 
goat feta (can do fresh burrata or ricotta instead), fresh sprouts, pretty pink flowers 

Preheat your oven to 375°. Wash and wrap your beets individually in tinfoil and place them on a baking sheet. Roast for 75 minutes, poke with a fork to check if they are soft! Allow them to cool slightly, then rub the skin off and slice into wedges or cubes! Set aside.

Place your goat cheese in a bowl and add in your lemon juice and zest, honey! Using a hand held mixer or food processor whip until creamy & smooth! I do about 3-4 minutes! Place your whipped cheese in the center of your serving dish, and spread it out towards the edges using a spatula or spoon!

Toss your arugula in your balsamic glaze. Place in the center of your goats cheese. Now top with your beet cubes or wedges. Add a drizzle of honey and balsamic glaze here!

Now top with your toasted sesame seeds, sprouts, goat feta or your choice of cheese! & of course pink flowers if you have some! Serve with fresh bread or crackers or eat as is!

I daydream about making this loaf all year, it’s my favourite spring tradition in the kitchen! It’s so light, fluffy and has so much flavour! Made without any refined sugars or processed ingredients. Lemon poppy seed loaf 🍋🌸

1½ cups organic unbleached all-purpose flour 
2 teaspoons baking powder 
½ teaspoon salt 
2 eggs at room temperature 
3/4 cup cane sugar or date sugar 
1 cup plain Greek yogurt, at room temperature 
½ cup avocado oil or olive oil 
Zest of two large lemons 
½ cup fresh squeezed lemon juice 
1 teaspoon vanilla extract 
2-3 tablespoons poppy seeds 

Lemon glaze 
1 cup monk fruit sweetener or icing sugar 
1 Tablespoon lemon juice fresh 
2 Tablespoon milk 

Preheat the oven to 350 degrees, line a loaf pan with parchment 

Combine dry ingredients in a medium bowl by whisking together the flour, baking powder and salt, set aside. 

Combine the wet ingredients. Crack eggs into a large bowl, add the sugar, and whisk vigorously until pale yellow and frothy. Then whisk in the yogurt, oil, vanilla, lemon juice and zest. 

Add the dry ingredients to the bowl with the wet ingredients. Folding it in until just combined (be sure to not overmix.) Then fold in the poppyseeds and mix one more time. 

Pour the batter into the baking dish and bake for 40-45 minutes! While the loaf bakes, prepare your lemon glaze by whisking all the ingredients together, adding more milk if you need to reach your desired consistency 

Once the loaf is done, allow it to cool for 15 minutes then pour your glaze on top! Slice and enjoy!

Here’s what I do to make my everyday yogurt bowl 💘

3/4 cup 0% Greek yogurt (high protein) 
1 scoop your favourite protein powder 
2 tsp @eversiowellness 4 mushroom blend 
1/2 cup blueberries 
1/2 banana 
1/2 tbsp pumpkin seeds 
2 tsp almond butter 

In a bowl mix together your yogurt, protein powder, and mushroom blend! Top with fresh fruit and add any other toppings you like 🤍 

This is my favourite high protein breakfast right now I eat it almost everyday, I’m obsessed! 💘🍓🫐

A heart shaped chocolate chip cookie skillet served warm with vanilla bean ice cream, it’s perfection

Here’s how to make the perfect heart shaped cooked skillet for Valentines Day 

½ cup softened butter or ½ cup coconut oil 
½ cup coconut sugar or brown sugar 
¼ cup date sugar or organic cane sugar 
1 egg 
1+¼ cup organic ww pastry flour or oat flour 
½ tsp baking soda 
¼ tsp sea salt 
1 tsp vanilla 
1 tsp Eversio 4 MB 
dark chocolate chips or chopped chocolate bar 

Preheat oven to 350°
Place your softened butter, and sugars into a large bowl and beat or whisk together
Now add in your egg, and beat it in. Now fold in your flour, baking soda, salt, vanilla and mushroom blend.
Add in chocolate chips or chunks and place into a skillet or deep dish that can go into the oven! Cast iron works too! 
Bake for 26-28 minutes for the perfect chewiness (this may differ depending on your oven- I would say by 30 minutes its done and don’t go over this)
Allow it too cool for 10 minutes before eating, serve with vanilla ice cream and eat while still warm from the oven 🤍

Here’s how I make my homemade pesto 🤍

Fresh Basil Pesto 
1 cup packed fresh basil leaves 
1 cup packed baby arugula 
1/3 cup toasted pine nuts 
1/4 cup nutritional yeast or grated Parmesan 
4 garlic cloves 
1 tsp @eversiowellness 6 mushroom blend 
salt & pepper to taste 
good squeeze of fresh lemon 
Ice cube *keeps your pesto bright green & vibrant 

pasta of your choice *save 1 cup salted pasta water 
topped with olive oil, salt & pepper, red chilli flakes & fresh burrata 

In a blender or food processor add in all your pesto ingredients. Pulse until well combined. Scrapping down the sides in-between pulses. 
Cook your pasta in salted water, make sure to save pasta water. Drain and rinse when al dente.  In a heated saucepan or frying pan add your desired amount of pesto and add a good splash of pasta water. Mix this then add your pasta. The pasta water will help coat your pasta and make it extra creamy. Taste test and see if you need more salt&pepper, or lemon juice! 
Top with olive oil, red chili flakes, and fresh burrata

This is one of my all time favourite recipes 🤍 I can’t wait for you to try it!

butter 
Flour 
almond flour 
monkfruit powder or powdered sugar 
maple syrup 
cinnamon 
vanilla 
sea salt 

dark chocolate 
coconut cream

Whipped Goat Cheese, Hot Honey & Walnut Crostini! This is one of my favourite savoury recipes to date especially for the holiday season… 

The whipped goat cheese is so creamy and fluffy, flavoured with fresh thyme & oregano! Topped with honey salted walnuts and perfectly sweetened with a  drizzle of spicy honey! All on top of a toasted garlic crostini! They’re divine, everyone always loveeeeees them! 🤍 

I add in my @eversiowellness mushroom blends into all my  recipes over the holidays! It doesn’t change the taste at all, which I love! It makes me so happy that’s those who enjoy all my cooking and baking get all the benefits! I especially lean on the rejuvenate blend during this time of the year for that extra glow from the inside out, it’s so rich in antioxidant! It’s a spa day for the cells!

Whipped Goat Cheese, Hot Honey & Walnut Crostini 
~1 fresh baguette -olive oil & garlic for brushing 

~Whipped Goat Cheese 
300 gram plain goat cheese (1 log) 
Fresh thyme & Oregano ( I do a little more than 1 tsp each) 
1 tsp @eversiowellness rejuvenate blend 
1 tbsp of your hot honey 

~Hot Honey 
1/4 cup runny honey, 2 tsp red chilli flakes, tiny splash apple cider vinegar for tang & a pinch of sea salt 

Honey Salted Walnuts 
1/3 cup chopped walnuts, good drizzle of honey so they’re sticky, 1 tsp sea salt (add based on preference) 

Slice you baguette, brush with olive oil and garlic. Bake at 350 for 15-20 min. Golden brown! Chop your walnuts and add to a frying pan with the honey and sea salt! Toast on low/medium heat for about 10 minutes! Allow them to cool completely! Mix your hot honey ingredients together! 

Place your goat cheese in a bowl with your finely diced thyme and oregano, hot honey, & sea salt! Whip it in a food processor, blender or hand mixer! Whip until creamy and smooth it took me about 4 minutes! Place this in a piping bag and pipe onto the toasted crostini, top with the walnuts, honey hot, fresh thyme or oregano! 

These are soooo delicious & simply beautiful for any holiday occasion!
