Loaded Veggie Sandwich
I LOVE a loaded veggie sandwich, but it has to actually taste good! You can’t just throw some random veggies in-between two pieces of bread and call it done… it’s has to have layers of flavour and be delicious with every single bite!! Just like my loaded veggie sandwich you have here!, there is sooo much good flavour and freshness! I was craving a loaded veggies sandwich so bad after the holidays I think because all the chocolate haha! This loaded veggie sandwich is so fresh and nourishing! Between the pesto and my homemade beet hummus lathered on the sides there is no room for dullness of flavour in this loaded veggie sandwich! It’s just the best, and you can totally get creative with whatever veggies are your favourite and as well as spreads! I made this one seriously loaded lol just look at it…
What’ll You’ll Need
What I love about veggies sandwiches is that they will never turn out exactly how you made the one before.. depending on what you have in the fridge or what veggies your craving you can totally get creative when making your loaded veggie sandwich! There are veggies I would have normally added but didn’t have on hand but it still turned about so beautiful and delicious! I’ll share with you exactly what I used but like I said get creative! You can also use whatever spreads or sauces that you like, I used my favourite store bought pesto spread as well as my homemade beet hummus you can find the recipe here! But you can use goat cheese, your favourite hummus, other cheese spreads! Seriously whatever you want to load you veggies sandwich up with! It’s so fun!!

fresh loaf seeded or normal sourdough
pesto
my homemade beet hummus or your favourite hummus
avocado
sprouts & pea shoots
tomatoas
cucumbers
red onion
cilantro
goat cheese (or other cheeses)
Making Your Loaded Veggie Sandwich
Start by slicing and toasting your loaf of sourdough, you can do this in the toaster or in a frying pan with some butter or olive oil! I prefer it in frying pan with a little bit of salt and parsley flakes, but I was on a time crunch so I just easily popped two pieces into the toaster and it was still so good! Gather all your veggies and spreads you want to use and once your toast is to your desired toastie-ness you can begin building your loaded veggie sandwich! I also forgot to add pickles, so you should definitely add those to your loaded veggie sandwich!!
I started by putting a very generous layer of pesto and the beet hummus on either sides of the toasted bread!! This is. crucial step to a tasty loaded veggie sandwich! You can’t skip the spreads or sauces!! I also would have loved to have added goat cheese here but I totally forgot! There is no right or wrong way to load up your sandwich, I just started by placing each veggie on either side one by one! Some veggies I loaded up with on both sides, like the sprouts!
Good luck closing up your loaded veggies sandwich when your done with all your veggies lol, its quite the challenge if you made your as big as mine! Making that first cut into it, and looking at the inside is sooo satisfying and beautiful! You will see all the layers to your loaded veggie sandwich, including your spreads on either side of the toast! Gosh this is such a simple and easy lunch but still so aesthetic and satisfying! Ingredients
- 1 loaf fresh sourdough I get seeded sourdough
- red onion
- tomatoes
- avocado
- cucumber
- cilantro
- beet hummus or any hummus
- pesto
- sprouts & pea shoots
- goat cheese or other cheeses
Instructions
- slice and toast your sourdough! Either toast in a frying pan with olive oil or butter and salt, or if your in a time crunch pop it in the toaster
- spread your hummus and pesto generously on either side of your toast, and begin building your loaded veggie sandwich with your desires veggies! Get creative with whatever veggies you love! Enjoy!
