My recipe is made free of any refined sugars and processed ingredients, making it so much healthier and nourishing! It can be the perfect breakfast loaf, snack and dessert! What You’ll Need

The ingredients for this lemon loaf are simple, nourishing and made without processed sugars and oils! It seriously makes all the difference in the taste and how you feel when you enjoy this! The plain greek yogurt adds in healthy proteins, and makes for the most fluffy and moist texture! I love using avocado oil or olive oil for a rich flavour, and to really help bring out that fresh zesty lemon tang! It also adds in healthy fats to this recipe which I love, you could also use coconut oil as well! I definitely don’t recommend ever using processed seed oils such as canola oil or vegetable oil in any way shape or form in the kitchen they are highly inflammatory and your body has no way to properly digest them! You’ll definitely want to use avocado, olive or coconut oil for this recipe! The lemon glaze is very simple and I love using monk fruit sweetener which is an all-natural powdered sugar replacement and it works wonderful! It’s my go to for any type of icing or glaze!

Making the Lemon Poppy Seed Loaf

Start by Preheating your oven to 350 degrees, and line a loaf pan with parchment paper for easy removal! I like to do one sheet going across the sides so I can pull it out of the loaf pan easily! Combine dry ingredients in a medium bowl by whisking together the flour, baking powder and salt, set aside for now.
Now combine your wet ingredients. Start by cracking your room temp eggs into a large bowl, add the sugar, and whisk vigorously until pale yellow and frothy. I typically do 30 seconds to a minute! This gives you a super fluffy lemon loaf! Then whisk in the yogurt, oil, vanilla, lemon juice and zest.
Now add the dry ingredients that we set aside to the bowl with the wet ingredients. Folding it in until just combined (be sure to not over mix.) Then fold in the poppyseeds and mix one more time. Pour the batter into the baking dish and bake for 40-45 minutes! I find the sweet spot is 43 minutes for my oven, but keep checking after 35 minutes!
While the loaf bakes, prepare your lemon glaze by whisking all the ingredients together, adding more milk if you need to reach your desired consistency. You don’t want it super runny, but also you want some run off and movement over the bread! I start adding slowly until I reach my desired consistency! Once the loaf is done, allow it to cool for 15 minutes before then pour your glaze on top! Slice and enjoy this beautiful lemon loaf!

Ingredients

  • 1 ½ cups organic unbleached flour
  • ½ tsp sea salt
  • 2 tsp baking powder
  • 2 eggs at room temp
  • ¾ cup cane sugar or date sugar
  • 1 cup plain greek yogurt at room temp

  • 2 zested lemons
  • 2 tsp vanilla
  • 2-3 tbsp poppy seeds

Lemon Glaze

  • 1 cup monk fruit sweetener powdered sugar
  • 1 tbsp fresh lemon juice
  • 2 tbsp almond milk or regular milk
