Chunky Chocolate Chip Cookies
Chunky, Chewy and gooey with dark chocolate chocolate chip cookies! These cookies are no joke, they taste even better than they look! These have big chunks of dark chocolate spread throughout each bite, with the perfect chewiness and are still soft and chunky! It's exactly what you need to make the perfect cookie, made with simple and clean ingredients and refined sugar free!
Servings 7 -9 cookies
Ingredients
- ½ + ⅔ cup oat flour
- 4 tbsp coconut sugar or high quality brown molasses sugar
- 4 tbsp organic cane sugar or double your coconut/brown sugar
- 1-2 tsp eversio mushroom blend
- 1 tsp cinnamon
- ¼ tsp sea salt
- ½ tsp baking soda
- 1 tbsp vanilla
- 3-4 tbsp almond milk start with three (if it doesn't form cookie dough balls that stay well together add 1 tbsp at a time more)
- 2 tbsp melted coconut oil
- 1 cup dark chocolate chips or dark chocolate bar for the large pools of chocolate use a dark chocolate bar and cut it up into chunks
Instructions
- Mix your dry ingredients all together and mix well! Then add in your wet, and mix again! It will be slightly crumbly but that’s okay- it will hold together once you roll into balls if not add another tbsp of almond milk!
- Mix in your dark chocolate and evenly roll the dough into cookie dough balls of your desired cookie size and press down slightly with your palm to help flatten the cookies! Place in the fridge for 30 minutes (this gives a chewy & soft cookie)!
- While the dough is chilling preheat your oven to 375!
- After 30 minutes bake the cookies for 7-9 minutes, they should flatten and start to crack! They will be extremely soft when you take them out – slightly underbaking will give you the perfect texture, allow them to cool completely!
Notes
- Add chocolate chunks to the top of each cookie dough ball before baking, this gives you those beautiful pools of dark chocolate right on top in the center! I also add in a couple more smaller chunks as soon as they come out of the oven and they melt right on top!
- if you want a larger batch of cookies simply double this recipe, this only make about half a batch!
