Ingredients

  • 3 ripe bananas 330g
  • 8 tbsp melted browned butter 118g or coconut oil
  • 1 egg
  • cup cane sugar
  • ½ cup brown sugar
  • 3 tsp vanilla or 1 tbsp vanilla bean paste
  • cup 0% greek yogurt
  • cup all purpose flour
  • 1 tsp baking soda
  • ½ tsp sea salt
  • 1 tsp cinnamon
  • 1 cup dark chocolate chunks

Instructions

  • Preheat the oven to 350°F (175°C). Line a 9-inch loaf pan with parchment paper. 
  • In a large bowl, mix the wet ingredients: Add browned butter to mashed banana, mix until combined. Add brown sugar, mix for 1–2 minutes until well combined. Add granulated sugar and mix until paste forms. Crack in the egg and whisk until fully incorporated. Add Greek yogurt, and vanilla. Mix for another 1–2 minutes until smooth. 
  • In a separate bowl, whisk together the dry ingredients: All-purpose flour, baking soda, salt, cinnamon.
  • Gradually fold the dry ingredients into the wet mixture until just combined. 
  • Fold in the chocolate chips. Pour the batter into the prepared loaf pan and top with additional chocolate chips, if desired. 
  • Bake for 55–60 minutes, or until a toothpick inserted in the center comes out clean. Allow the bread to cool completely before slicing and enjoying.
