No-Bake Chocolate-Dipped Almond Crumble Cookies

I actually can’t believe how good these turned out! I have already made two batches in a week because everyone who tried them loved them so much! It is easy to say that I am OBSESSED with these No-Bake Chocolate-Dipped Almond Crumble Cookies and come on, how cute are they! The heart shapes were such a pain in the ass to make, but it was worth it for these shots, but trust me when I say you definitely don’t have to do that part they will taste just as amazing either way! They have the most delicious texture from the crunchy almond crumble sweetened with creamy almond butter, sweet Medjool dates and raw honey to the dark chocolate dip, they seriously are just when you need when you are craving something sweet and delicious. The best part is that they are packed with so much wholesome goodness and naturally sweetened, so there is absolutely no guilt with these lil’ babies. They can be eaten as a quick breakfast, for an energy booster, a snack, or to cure any craving! I personally love to have healthy baked goods or treats on hand because let’s be real you, will always crave deliciousness and something chocolatey, and your body deserves it and can be satisfied in nutritious ways!

Making the No-Bake Chocolate-Dipped Almond Crumble Cookies

Making these No-Bake Chocolate-Dipped Almond Crumble Cookies couldn’t be easier I swear, and did I mention they don’t even need to be baked? That is a huge time saver for me personally! They include ingredients I always have on hand and can be whipped up in 15 minutes! The ingredients for these no bake almond crumble cookie includes the following:

roasted almonds

large medjool dates

honey

almond butter

ground flax seeds

cinnamon

salt

splash of vanilla

cacao nibs

your favourite dark chocolate for dipping

If you don’t have almonds that are already roasted that’s totally ok, I didn’t either so I placed 1 cup of almonds on a baking sheet and placed it in the oven at 325 degrees and baked them for about 10 minutes! I let them cool then I placed them into the food processor and blended until they resembled an almond crumble. You will want to make sure your almonds are roasted for these cookies! Then I added the dates, honey, almond butter, flax seeds, cinnamon, salt and a splash of vanilla. Once this is all combined and makes a sticky but crumbly dough, I add in the cacao nibs and pulse until combined.

Don’t worry if your dough seems really crumbly at first, it should easily hold once you start to form it into flat half inch thick cookies! About 1 tbsp I would say for each cookie! Now like I said before, I recommend you leave it in circular cookie shapes, this will save you a lot of time! I shaped mine into hearts, but this took me quite some time because the dough is on the crumbly side and they started to crack way easier! So you have been warned, lol! If you do decide to go all out and make the heart shapes I did this by making a little slit in the top middle of the cookie (using the opposite end of a utensil) to make the top of the heart, and then used my hands to help shape it! Once you have your cookies shaped however you desire, you can place them in the fridge to firm up while we melt the chocolate to dip our almond crumble cookies in.

The cookies already taste so delicious on their own but the chocolate dipping really just makes them something else! So all you will need for this is some dark chocolate and coconut oil! After you have placed your almond crumble cookies in the fridge to firm and harden, you can start by adding your dark chocolate chips and coconut oil to a saucepan and melting on medium-low heat. Make sure you are stirring often so that it doesn’t burn and melts evenly. Once your chocolate is melted pour it into a bowl that you can easily dip half of your cookie into to coat half of it in chocolate. Top with raw cacao nibs too! Once all of your cookies are dipped in chocolate you can place them back into the fridge and allow them to harden. This should take about 30 minutes, and then finally you can taste and you will know what I mean when I say I am obsessed with these No-Bake Chocolate-Dipped Almond Crumble Cookies! Store in your fridge or freezer to enjoy at your convenience.

No-Bake Chocolate-Dipped Almond Crumble Cookies

A power-packed chocolate-dipped cookie that is great for breakfast, a snack or to cure any craving! Made from roasted almonds, sweet dates and delicious creamy almond butter! One of my all-time favourite sweet treats!

Ingredients

  • 1 cup roasted almonds
  • 6-8 Medjool dates pitted
  • ½ cup almond butter
  • ¼ cup honey (soft)
  • 2 tbsp ground flax seed
  • 2 tsp cinnamon
  • ½ tsp salt
  • splash vanilla
  • 2 tbsp cacao nibs

Chocolate Dipping

  • cup dark chocolate chips
  • 1 tbps coconut oil

Instructions

  • If your almonds are not yet roasted begin by placing 1 cup of almonds on a baking sheet and bake for 10 minutes at 325° (if they are already roasted skip this step).
  • Begin by placing your almonds in the food processor and blend until almonds are completely diced and form a crumble.
  • Simply add your dates, almond butter, flax seeds, honey, salt, cinnamon, and vanilla into the almond crumble and mix until fully combined.
  • Now add you in cacao nibs and pulse until just combined. Your mixture should resemble a crumbly but sticky enough dough that when formed into a cookie it holds together.
  • Form the dough into circular cookies about half inch thick. If desired, shape into hearts by cutting a little wedge into the top middle of the cookie and shape with hands to form a heart. (I would skip this step unless you are really committed lol)
  • While you melt your chocolate and coconut oil together in a saucepan on low-medium heat place your cookies in the fridge to harden.
  • Once the chocolate is fully melted dip your cookies and place them back into the fridge until the chocolate has hardened (about 30 min), then ENJOY! Store in the fridge or freezer!
