Making the Whipped Goat Cheese, Hot Honey & Walnut Crostini’s

Start by slicing your baguette and brushing each piece with a mixture of olive oil and crushed garlic. A sprinkle of sea salt takes it up a notch. Toast at 350°F for 15–20 minutes, until golden and just crisp on the edges—the perfect base for what’s coming.

While the bread bakes, toast your chopped walnuts in a pan with honey and sea salt. Keep the heat low and stir gently as the honey bubbles and thickens on the walnuts. After about 10 minutes, they’ll be glossy and fragrant with the most addictive, nutty aroma. Let them cool completely—they’ll crisp up into little golden clusters. Mix everything together for your hot honey and set it aside for the final drizzle. The warmth and subtle heat bring everything to life.

Now comes the whipped goat cheese. Combine the goat cheese with finely chopped thyme, oregano, a splash of hot honey, and a pinch of sea salt on a large bowl. Whip it all together until smooth and airy—it took me about 4 minutes with a hand mixer- you can use a blender or a food processor here. The herbs add a soft earthiness that pairs beautifully with the creamy tang of the cheese.

To assemble: pipe or spoon the whipped goat cheese onto your crostinis, top with the sweet-salty walnuts, drizzle with hot honey, and finish with a sprinkle of fresh herbs. They’re rich, bright, and perfectly balanced—like the kind of appetizer that makes everyone pause mid-bite and go wait, what is this?! They’re amazing…

A few ways to make it different:
Swap goat cheese for whipped feta or ricotta
Use pecans or almonds instead of walnuts
Add thinly sliced pears or figs on top for a sweet & summery twist
Make it into a crostini board with extra toppings for a party moment

These crostinis are guaranteed to disappear fast—so maybe make a double batch. I love serving them with a chilled glass of champagne or sparkling cocktail, especially outdoors when the sun is just starting to hang a little longer in the sky. Let me know if you make them—I’d love to see your version!

Ingredients

  • 1 fresh baguette olive oil and garlic for brushing

Whipped Goat Cheese

  • 300 gram plain goat cheese 1 log
  • 1 tsp fresh diced thyme
  • 1 tsp fresh diced oregano
  • 2 tbsp hot honey
  • 1 pinch sea salt & pepper

Hot Honey

  • 1/4 cup honey
  • 1-2 tsp red chilli flakes
  • 1 tiny splash apple cider vinegar
  • pinch sea salt

Honey Salted Walnuts

  • 1/3 cup chopped walnuts
  • 1-2 tbsp honey until walnuts are well coated
  • 1 tsp sea salt

Instructions

  • Start by slicing your baguette and brushing it with olive oil and crushed garlic mixed together! Sprinkle with a little sea salt and place in the oven at 350 degrees for about 15-20 minutes! Until just toasted and a little golden!
  • While that’s baking, prepare your walnuts by chopping them and adding them to a frying pan with the honey and sea salt! Toast on low/medium heat for about 10 minutes! Then allow them to cool completely- they will harden!
  • Now prep your hot honey by adding all your ingredients together! And set those aside! I like to warm mine together in a saucepan so everything simmers together, but it's not necessary if you are short on time!
  • Place your goat cheese in a bowl with your finely diced thyme and oregano, hot honey, & sea salt! Whip it in a food processor, blender or use a hand mixer! Whip until creamy and smooth it took me about 4 minutes with a hand held mixer!
  • Place this in a piping bag and pipe onto the toasted crostini, top with the toasted salty walnuts, a drizzle of honey hot, garnish with fresh thyme or oregano! Enjoy!
